八(ba)百(bai)里(li)秦川之(zhi)中(zhong)有一地名曰(yue)龍(long)(long)(long)(long)窩(wo),清光緒年井(jing)一口,井(jing)水通靈(ling),適于釀(niang)酒,隨之(zhi)龍(long)(long)(long)(long)窩(wo)酒應運(yun)而(er)生(sheng),愈釀(niang)愈醇,香溢關(guan)中(zhong)。龍(long)(long)(long)(long)窩(wo)酒志記載(zai),昔日龍(long)(long)(long)(long)窩(wo),東西(xi)臨(lin)河(he),曲流九灣(wan),積水成潭(tan),常有低(di)云(yun)起霧巨(ju)龍(long)(long)(long)(long)騰空(kong)之(zhi)壯觀,人云(yun):龍(long)(long)(long)(long)臥福地,飲水還(huan)童龍(long)(long)(long)(long)窩(wo),因此而(er)得名。
龍(long)(long)(long)窩酒(jiu)(jiu)(jiu)作坊創建于清代光緒年(nian)間,距今已有百余年(nian)歷(li)史。至民國時期,龍(long)(long)(long)窩酒(jiu)(jiu)(jiu)名揚關中,民間有“東龍(long)(long)(long)西(xi)鳳”之美譽。 龍(long)(long)(long)窩酒(jiu)(jiu)(jiu)釀(niang)造技藝在承(cheng)傳古法(fa)中被歷(li)代師傅總結為九句口(kou)決,即:“人得(de)(de)(de)(de)其誠、水得(de)(de)(de)(de)其甘、曲得(de)(de)(de)(de)其時、糧得(de)(de)(de)(de)其實、器得(de)(de)(de)(de)其潔、工(gong)得(de)(de)(de)(de)其細、拌得(de)(de)(de)(de)其準、火得(de)(de)(de)(de)其緩、酒(jiu)(jiu)(jiu)得(de)(de)(de)(de)其真”。其知識、經驗(yan)、準則自成系統。
龍(long)(long)窩(wo)酒(jiu)(jiu)(jiu)的(de)(de)(de)釀制(zhi)用曲(qu)(qu)為(wei)中(zhong)溫曲(qu)(qu),采用關中(zhong)地區優質(zhi)小麥、大麥、碗(wan)豆三種原(yuan)料(liao),工(gong)藝(yi)(yi)采用古法制(zhi)曲(qu)(qu),經(jing)人工(gong)踩坯,入室發酵(jiao)而(er)(er)成。龍(long)(long)窩(wo)酒(jiu)(jiu)(jiu)的(de)(de)(de)釀造酒(jiu)(jiu)(jiu)原(yuan)料(liao)采用關中(zhong)地區的(de)(de)(de)優質(zhi)高梁(liang)、玉米為(wei)原(yuan)料(liao),以稻(dao)糠皮為(wei)輔料(liao)。工(gong)藝(yi)(yi)過(guo)(guo)程(cheng)包(bao)括潤糝、清蒸(zheng)、加漿、攤涼(liang)、加曲(qu)(qu)、入窖(jiao)、發酵(jiao)及(ji)蒸(zheng)餾等,其每一(yi)(yi)個環(huan)節(jie)都(dou)有著(zhu)獨特的(de)(de)(de)知(zhi)(zhi)識、經(jing)驗和(he)操(cao)作(zuo)(zuo)準(zhun)則。 龍(long)(long)窩(wo)酒(jiu)(jiu)(jiu)的(de)(de)(de)繁(fan)雜工(gong)序(xu)都(dou)是手工(gong)完成,這(zhe)是一(yi)(yi)種依賴感性和(he)經(jing)驗的(de)(de)(de)操(cao)作(zuo)(zuo)過(guo)(guo)程(cheng)。一(yi)(yi)百多年來,它的(de)(de)(de)工(gong)藝(yi)(yi)技(ji)術(shu)全靠(kao)師徒(tu)傳(chuan)承(cheng),經(jing)過(guo)(guo)一(yi)(yi)代(dai)代(dai)“酒(jiu)(jiu)(jiu)把式”的(de)(de)(de)不斷實踐,龍(long)(long)窩(wo)酒(jiu)(jiu)(jiu)釀造技(ji)藝(yi)(yi)已(yi)經(jing)形成了(le)一(yi)(yi)套(tao)獨特而(er)(er)完整的(de)(de)(de)知(zhi)(zhi)識系(xi)統(tong),從原(yuan)料(liao)特點(dian)到制(zhi)曲(qu)(qu)和(he)發酵(jiao),它的(de)(de)(de)每一(yi)(yi)個重要(yao)環(huan)節(jie)都(dou)和(he)關中(zhong)的(de)(de)(de)氣(qi)候相適應(ying)。百余(yu)年來,龍(long)(long)窩(wo)酒(jiu)(jiu)(jiu)作(zuo)(zuo)坊一(yi)(yi)直延續著(zhu)祭(ji)拜龍(long)(long)王和(he)酒(jiu)(jiu)(jiu)神的(de)(de)(de)傳(chuan)統(tong),這(zhe)種習俗和(he)其釀造技(ji)藝(yi)(yi)共同構成了(le)古代(dai)釀酒(jiu)(jiu)(jiu)文化(hua)較(jiao)為(wei)完整的(de)(de)(de)歷(li)史(shi)面貌,具(ju)有很高的(de)(de)(de)歷(li)史(shi)和(he)文化(hua)價值。
