北京(jing)鴨(ya)(ya)是世界(jie)著名的(de)優良肉用鴨(ya)(ya)標準(zhun)品種。具有(you)生(sheng)長發育(yu)快、育(yu)肥性能好的(de)特點,是聞名中外“北京(jing)烤鴨(ya)(ya)”的(de)制作原料。原產(chan)于北京(jing)西郊玉泉(quan)山一帶,現(xian)已(yi)遍布世界(jie)各地,在(zai)國(guo)際養鴨(ya)(ya)業中占有(you)重要(yao)地位。
國內(nei)北京(jing)鴨肉用性能(neng)尚低(di)于國外先(xian)進水(shui)平,其中早(zao)期生產速度差距(ju)較大,其他如成活率(lv)、孵化率(lv)及胸肉率(lv)等均有差距(ju)。
品種特征
鳥綱(gang)雁形目鴨(ya)科(ke)動物。由(you)綠頭鴨(ya)馴化而來,是家鴨(ya)的(de)優(you)良品種之一。
北(bei)(bei)京(jing)鴨(ya)(ya)原產于(yu)北(bei)(bei)京(jing)玉泉山一帶,因此而得名。它的馴養(yang)歷史(shi)至少有200~300年。羽(yu)毛純白色,嘴、腿和蹼呈橘紅色,頭和喙較(jiao)短,頸長,體質健壯(zhuang),生長快,剛出生時(shi)體重約56克。60天就可達2~2.5千克。雄鴨(ya)(ya)可長到3~4千克。雌鴨(ya)(ya)成熟早,一般長到6~7個(ge)月就開始產卵。年產卵70~120枚。北(bei)(bei)京(jing)鴨(ya)(ya)肉肥(fei)味美,馳名中外的北(bei)(bei)京(jing)烤鴨(ya)(ya),就是用北(bei)(bei)京(jing)鴨(ya)(ya)烤制而成的。北(bei)(bei)京(jing)鴨(ya)(ya)已傳入外國(guo),世界各國(guo)都有分布。
北京鴨(ya)體(ti)(ti)型碩(shuo)大(da)豐(feng)(feng)滿(man)(man),挺拔美(mei)觀。頭較(jiao)大(da)。喙中(zhong)等大(da)小(xiao)。眼大(da)而明亮。頸(jing)粗、中(zhong)等長(chang)。體(ti)(ti)軀(qu)長(chang)方(fang),前(qian)部(bu)昂起(qi),與(yu)地面約是30°角,背寬平(ping),胸部(bu)豐(feng)(feng)滿(man)(man),胸骨長(chang)而直.兩翅(chi)較(jiao)小(xiao)而緊附于體(ti)(ti)軀(qu)。尾短(duan)(duan)而上翹,公鴨(ya)有4根卷(juan)起(qi)的性羽(yu)。產蛋(dan)母鴨(ya)因輸卵管發達而腹部(bu)豐(feng)(feng)滿(man)(man),顯(xian)得后(hou)(hou)軀(qu)大(da)于前(qian)軀(qu),腿短(duan)(duan)粗,蹼寬厚。全身羽(yu)毛豐(feng)(feng)滿(man)(man),羽(yu)色(se)(se)純(chun)白并帶有奶油(you)光澤;喙、脛(jing)、蹼橙黃(huang)色(se)(se)或(huo)橘紅色(se)(se);虹(hong)彩藍灰色(se)(se)。初生雛鴨(ya)絨羽(yu)金黃(huang)色(se)(se),稱(cheng)為“鴨(ya)黃(huang)”,隨(sui)口齡增加(jia)顏色(se)(se)逐漸變淺,至金周齡前(qian)后(hou)(hou)變成白色(se)(se);至60日齡羽(yu)毛長(chang)齊(qi),喙 、進發、蹼橘紅色(se)(se)。

肥肝性能
北京(jing)(jing)鴨(ya)(ya)有(you)較好的(de)(de)肥(fei)(fei)肝(gan)性(xing)能,是國(guo)外生(sheng)產(chan)肥(fei)(fei)肝(gan)的(de)(de)主(zhu)要鴨(ya)(ya)種,用(yong)80~90日齡北京(jing)(jing)鴨(ya)(ya)或北京(jing)(jing)鴨(ya)(ya)與瘤頭鴨(ya)(ya)雜交的(de)(de)雜種鴨(ya)(ya),填飼 2~3周,每只可產(chan)肥(fei)(fei)肝(gan) 300~400 g,而且(qie)填肥(fei)(fei)鴨(ya)(ya)的(de)(de)增重(zhong)快,可達到(dao)肝(gan)、肉雙(shuang)收的(de)(de)目(mu)的(de)(de)。我國(guo)從1980年開(kai)始用(yong)北京(jing)(jing)鴨(ya)(ya)試(shi)填肥(fei)(fei)胖,1980年上(shang)海市青浦(pu)縣徐涇肥(fei)(fei)肝(gan)場用(yong)北京(jing)(jing)鴨(ya)(ya)生(sheng)產(chan)肥(fei)(fei)肝(gan)10余。3、產(chan)蛋(dan)性(xing)能北京(jing)(jing)鴨(ya)(ya)不(bu)僅具(ju)有(you)優良肉用(yong)性(xing)能,而且(qie)具(ju)有(you)很(hen)高(gao)的(de)(de)產(chan)蛋(dan)性(xing)能。60年代以前(qian),曾直認為(wei)北京(jing)(jing)鴨(ya)(ya)的(de)(de)年產(chan)蛋(dan)量(liang)為(wei) 180個,蛋(dan)重(zhong)為(wei)90g以上(shang)。
養殖場人(ren)工(gong)強(qiang)(qiang)制換(huan)羽是我(wo)國(guo)北(bei)京鴨(ya)生產(chan)(chan)的傳統(tong)種(zhong)鴨(ya)管理技(ji)術(shu)。種(zhong)鴨(ya)在第一(yi)(yi)個(ge)(ge)產(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)(dan)(dan)期末,即產(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)(dan)(dan)9~10個(ge)(ge)月以后(hou),產(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)(dan)(dan)率(lv)。種(zhong)蛋(dan)(dan)(dan)(dan)(dan)(dan)(dan)質量和受(shou)(shou)精(jing)率(lv)均(jun)開始下降(jiang)。此時,通過短期限制飼喂(wei)、飲水(shui)和照明等措施,迫使母(mu)鴨(ya)停產(chan)(chan)換(huan)羽,并于40~50d內恢(hui)復(fu)產(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)(dan)(dan),利用第二(er)個(ge)(ge)產(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)(dan)(dan)期。經過人(ren)工(gong)強(qiang)(qiang)制換(huan)羽的鴨(ya)群復(fu)產(chan)(chan)整齊(qi)一(yi)(yi)致(zhi),保持較(jiao)高(gao)的產(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)(dan)(dan)率(lv)、種(zhong)蛋(dan)(dan)(dan)(dan)(dan)(dan)(dan)受(shou)(shou)精(jing)率(lv)和孵(fu)化率(lv)。一(yi)(yi)般第二(er)個(ge)(ge)產(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)(dan)(dan)期多為6個(ge)(ge)月左右。在兩個(ge)(ge)產(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)(dan)(dan)期內,每只(zhi)母(mu)鴨(ya)可產(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)(dan)(dan)280~290個(ge)(ge)。60年代以來,國(guo)外(wai)肉鴨(ya)生產(chan)(chan)中亦開始采(cai)用人(ren)工(gong)強(qiang)(qiang)制換(huan)羽,而我(wo)國(guo)的北(bei)京鴨(ya)場中有(you)許多卻改(gai)為僅利用種(zhong)鴨(ya)的頭一(yi)(yi)個(ge)(ge)產(chan)(chan)蛋(dan)(dan)(dan)(dan)(dan)(dan)(dan)年,80年代初(chu),有(you)些(xie)鴨(ya)場又開始采(cai)用人(ren)工(gong)強(qiang)(qiang)制換(huan)羽。
蛋的品質
據(ju)1983年中(zhong)國農業科學院畜(chu)牧(mu)研究所測定,72周齡種鴨蛋(dan)351個,平均(jun)蛋(dan)重為(wei) 103 g,蛋(dan)殼(ke)厚為(wei) 0.358 mm,蛋(dan)殼(ke)強度為(wei) 4.9 kg/cm2,蛋(dan)形指(zhi)數(shu)為(wei) 1.41,哈(ha)氏單位。為(wei)73.1。
繁殖性能
性成(cheng)(cheng)熟期為(wei)150~180日(ri)齡。公母配種比例多為(wei)1:5。種蛋受(shou)精率為(wei)90%以上。受(shou)精蛋孵化(hua)率為(wei)80 %左(zuo)右(you)。成(cheng)(cheng)活率:1~28日(ri)齡雛鴨(ya)(ya)成(cheng)(cheng)活率為(wei)95%以上。一般生(sheng)產(chan)場每只母鴨(ya)(ya)可年(nian)(nian)生(sheng)產(chan)(繁殖)80只左(zuo)右(you)肉(rou)(rou)鴨(ya)(ya)或填鴨(ya)(ya)。育種場的每只母鴨(ya)(ya)年(nian)(nian)產(chan)肉(rou)(rou)鴨(ya)(ya)100只以上。
生活習性
北京鴨(ya)(ya)性情溫馴,膽小(xiao)怕驚,非常(chang)合(he)群。北京鴨(ya)(ya)作(zuo)為水禽,種鴨(ya)(ya)交(jiao)配一(yi)般(ban)選擇早晨(chen)或傍晚在(zai)廣闊的水面(mian)進行。但在(zai)人工旱(han)養條件下(xia)種鴨(ya)(ya)也能交(jiao)配,正常(chang)情況下(xia),成年種鴨(ya)(ya)產蛋主要集中在(zai)午夜以(yi)(yi)后(hou)到黎明(ming)以(yi)(yi)前這段時間,此時夜深人靜(jing),沒有(you)任何吵擾,最(zui)適合(he)鴨(ya)(ya)類繁殖(zhi)后(hou)代的特殊要求,北京鴨(ya)(ya)一(yi)般(ban)不在(zai)白天產蛋。

英(ying)“混血”鴨(ya)取代北京鴨(ya)
國(guo)家(jia)(jia)環(huan)保(bao)總局日前公布一份資料指出,中(zhong)國(guo)本(ben)(ben)土物種遺傳(chuan)資源流失狀況(kuang)堪憂,由(you)于本(ben)(ben)地物種資料保(bao)護意識落后(hou),中(zhong)國(guo)正(zheng)成(cheng)為發達國(guo)家(jia)(jia)攫(jue)取遺傳(chuan)資源的新目標。中(zhong)國(guo)的野生(sheng)大豆、奇異果甚(shen)至家(jia)(jia)禽都被發達國(guo)家(jia)(jia)拿(na)走(zou),“混(hun)血”改良(liang)后(hou)再重新用(yong)來搶占中(zhong)國(guo)市(shi)場。
專家薛達(da)元教授(shou)表示,中(zhong)國(guo)本土物種流(liu)失最(zui)突出(chu)的(de)例(li)子是“北(bei)(bei)京鴨(ya)”,該品種在英(ying)(ying)國(guo)被(bei)雜交(jiao)后繁育出(chu)來新良種“櫻(ying)桃谷”鴨(ya),后來,英(ying)(ying)國(guo)繁育的(de)“櫻(ying)桃谷”鴨(ya)又重(zhong)新被(bei)引種到中(zhong)國(guo),占領中(zhong)國(guo)的(de)市(shi)場。現在,在中(zhong)國(guo)真(zhen)正的(de)“北(bei)(bei)京鴨(ya)”幾乎絕跡,而重(zhong)新由英(ying)(ying)國(guo)引進的(de)“櫻(ying)桃谷”鴨(ya),成(cheng)為(wei)北(bei)(bei)京烤鴨(ya)的(de)主要原(yuan)料。
北京鴨引(yin)入美(mei)國惹(re)轟動(dong)
北(bei)(bei)(bei)京(jing)鴨的物種(zhong)遺(yi)傳(chuan)資(zi)源最早從(cong)中國(guo)(guo)(guo)流傳(chuan)至外國(guo)(guo)(guo)是在清朝,美(mei)國(guo)(guo)(guo)人(ren)詹(zhan)姆斯·帕爾(er)默于1873年從(cong)天津將(jiang)北(bei)(bei)(bei)京(jing)鴨運至美(mei)國(guo)(guo)(guo),從(cong)此(ci)北(bei)(bei)(bei)京(jing)鴨的物種(zhong)遺(yi)傳(chuan)資(zi)料流出國(guo)(guo)(guo)外。同年,英(ying)國(guo)(guo)(guo)人(ren)克爾(er)又(you)將(jiang)北(bei)(bei)(bei)京(jing)鴨的種(zhong)蛋引入英(ying)國(guo)(guo)(guo),1875年,英(ying)國(guo)(guo)(guo)人(ren)將(jiang)填(tian)肥的北(bei)(bei)(bei)京(jing)鴨海運至美(mei)國(guo)(guo)(guo),立刻引起美(mei)國(guo)(guo)(guo)市場的轟(hong)動(dong)。當時(shi)有(you)文章寫(xie)道:(北(bei)(bei)(bei)京(jing)鴨)樣品既(ji)出,社會(hui)耳目(mu)為之(zhi)一新,紳士名媛,交與不置(zhi)。購(gou)者驟多,供(gong)給缺乏。一時(shi)價(jia)格(ge)騰貴,每(mei)卵一枚,當金(jin)元(yuan)一元(yuan)之(zhi)價(jia),美(mei)國(guo)(guo)(guo)社會(hui),遂有(you)鴨即(ji)金(jin)磚之(zhi)榮稱(cheng)。
英(ying)國的(de)櫻(ying)桃谷(gu)鴨(ya)(ya)(ya)(ya),美國長島鴨(ya)(ya)(ya)(ya)等都是在北京(jing)鴨(ya)(ya)(ya)(ya)的(de)基礎上(shang)選育而成的(de)。現(xian)(xian)在英(ying)國的(de)櫻(ying)桃谷(gu)鴨(ya)(ya)(ya)(ya),已經(jing)取(qu)代(dai)北京(jing)鴨(ya)(ya)(ya)(ya),成為“北京(jing)烤鴨(ya)(ya)(ya)(ya)”的(de)主(zhu)要原料。中國輸(shu)出北京(jing)鴨(ya)(ya)(ya)(ya)的(de)物種時,沒(mei)有(you)獲利,現(xian)(xian)在引(yin)進(jin)英(ying)國的(de)櫻(ying)桃谷(gu)鴨(ya)(ya)(ya)(ya)種,反(fan)而還必須用外匯購買,造成巨大的(de)經(jing)濟損(sun)失。
