糯米(mi)食(shi)品,品種很多,以其(qi)所用(yong)配(pei)料(liao)不同而(er)味道各異(yi),有豆(dou)(dou)(dou)子粽(zong)、板栗粽(zong)、蓮蓉(rong)粽(zong)、裹蒸(zheng)粽(zong)、三角(jiao)粽(zong)等。制法(fa)一般用(yong)浸泡過的上好(hao)大糯和配(pei)料(liao)拌勻(yun),用(yong)洗凈的竹葉包(bao)成扎好(hao),用(yong)火蒸(zheng)煮1-2小時,取出濾干(gan)水份即可食(shi)用(yong)。配(pei)料(liao)一般有綠豆(dou)(dou)(dou)、紅豆(dou)(dou)(dou)、花生(sheng)、五花肉(rou)(或臘肉(rou))、板栗、蓮蓉(rong)等。

以上(shang)方法,一(yi)(yi)看(kan)就(jiu)知(zhi)道不(bu)是(shi)(shi)桂林人(ren)寫(xie)的,我補充一(yi)(yi)下(xia):桂林粽(zong)(zong)(zong)子(zi)一(yi)(yi)般不(bu)用(yong)綠(lv)豆(dou)和花(hua)(hua)(hua)生(sheng),一(yi)(yi)般是(shi)(shi)用(yong)花(hua)(hua)(hua)豆(dou),就(jiu)是(shi)(shi)上(shang)面有(you)很(hen)多(duo)花(hua)(hua)(hua)紋的那種豆(dou)子(zi)。粽(zong)(zong)(zong)子(zi)還不(bu)是(shi)(shi)三角粽(zong)(zong)(zong),而是(shi)(shi)四角粽(zong)(zong)(zong),還有(you)門栓粽(zong)(zong)(zong),還有(you)圓(yuan)圓(yuan)的大粽(zong)(zong)(zong),可以切片煎來吃的。而且(qie)桂林粽(zong)(zong)(zong)子(zi)一(yi)(yi)般不(bu)放(fang)(fang)(fang)蛋(dan)黃(huang),月(yue)餅才放(fang)(fang)(fang)蛋(dan)黃(huang)。桂林粽(zong)(zong)(zong)子(zi)放(fang)(fang)(fang)五花(hua)(hua)(hua)肉,而且(qie)五花(hua)(hua)(hua)肉還是(shi)(shi)裹上(shang)了炒熟的芝麻,很(hen)香,有(you)板栗的話就(jiu)放(fang)(fang)(fang)板栗。桂林人(ren)喜歡吃咸的粽(zong)(zong)(zong)子(zi),里(li)面一(yi)(yi)般不(bu)放(fang)(fang)(fang)紅棗。而且(qie)煮粽(zong)(zong)(zong)子(zi)的時候(hou)會(hui)放(fang)(fang)(fang)一(yi)(yi)些純堿,煮熟的粽(zong)(zong)(zong)子(zi)會(hui)更(geng)有(you)香氣(qi),而且(qie)顏色會(hui)有(you)點黃(huang),很(hen)好看(kan)!我桂林人(ren),從小吃粽(zong)(zong)(zong)子(zi)吃到大!
