梅(mei)菉麻(ma)通是吳(wu)川糖(tang)(tang)果(guo)生產(chan)(chan)中(zhong)(zhong)(zhong)的獨特名優產(chan)(chan)品,該產(chan)(chan)品系(xi)用大(da)糯米、水芋頭、白(bai)糖(tang)(tang)、芝麻(ma)等原(yuan)料,經過(guo)特殊(shu) 的處理方法(fa)和制(zhi)作技術做成(cheng)半(ban)(ban)成(cheng)品,曬干后隨時備用。再(zai)加工(gong)制(zhi)作時,將此半(ban)(ban)成(cheng)品先后投(tou)進分別(bie)用文武火煮成(cheng)不同溫度(du)的兩(liang)個油鍋(guo)中(zhong)(zhong)(zhong)去炸,炸至膨脹適度(du),取出淋上白(bai)糖(tang)(tang)膠,灑上芝麻(ma)即成(cheng)。成(cheng)品粗如甘蔗(zhe),長(chang)7~8公分,中(zhong)(zhong)(zhong)空充滿泡沫,入口松脆(cui)香(xiang)甜,是糖(tang)(tang)果(guo)中(zhong)(zhong)(zhong)佳品。麻(ma)通的制(zhi)作,在吳(wu)川已有一百多(duo)年歷(li)史,但其(qi)制(zhi)作技術秘傳(chuan),直至60年代才(cai)公開。
吳(wu)川(chuan)獨(du)(du)有(you)(you)的(de)(de)風(feng)味(wei)小食(shi)(shi)(shi)麻(ma)(ma)(ma)通(tong)形(xing)似香蕉,色澤金黃,入口酥脆,咀嚼無渣,香甜可(ke)口,是(shi)吳(wu)川(chuan)傳統(tong)的(de)(de)小食(shi)(shi)(shi),在(zai)清朝已有(you)(you)制(zhi)作(zuo)(zuo)。麻(ma)(ma)(ma)通(tong)是(shi)梅錄頭老人陳(chen)華(hua)堂的(de)(de)絕藝,只(zhi)有(you)(you)陳(chen)氏一家懂得制(zhi)作(zuo)(zuo)。制(zhi)作(zuo)(zuo)麻(ma)(ma)(ma)通(tong)要(yao)精選香膠糯米(mi),用人工搗成粉,再經炊、曬、火局、炸等(deng)工序(xu),前后(hou)歷時十五日才能制(zhi)成。由于(yu)選料難、工序(xu)多、制(zhi)作(zuo)(zuo)復雜(za)、利潤薄(bo),陳(chen)家停(ting)止制(zhi)作(zuo)(zuo)麻(ma)(ma)(ma)通(tong)已有(you)(you)幾十年。后(hou)來有(you)(you)關部門(men)的(de)(de)熱(re)心動員下,陳(chen)家決定重操舊業,讓麻(ma)(ma)(ma)通(tong)這一吳(wu)川(chuan)風(feng)味(wei)小食(shi)(shi)(shi)重出(chu)江湖,并(bing)在(zai)吳(wu)川(chuan)市第(di)三(san)屆美食(shi)(shi)(shi)節上呈獻(xian)出(chu)來,讓廣大市民品(pin)嘗(chang)到風(feng)味(wei)獨(du)(du)特的(de)(de)吳(wu)川(chuan)傳統(tong)小食(shi)(shi)(shi)。在(zai)美食(shi)(shi)(shi)節上麻(ma)(ma)(ma)通(tong)的(de)(de)美味(wei)受到廣泛的(de)(de)好評。吳(wu)川(chuan)市土(tu)特產專賣店(dian)有(you)(you)麻(ma)(ma)(ma)通(tong)出(chu)售。
