徽州多山(shan),宜(yi)種苞蘆(lu)(玉(yu)米)。苞蘆(lu)磨成(cheng)(cheng)(cheng)粉,用(yong)開(kai)水燙(tang)后揉成(cheng)(cheng)(cheng)面(mian)團(tuan),用(yong)豬板油(you)加鮮(xian)菜(cai)和腌雪里(li)蕻為餡(xian)(xian)。取(qu)一份(fen)玉(yu)米面(mian)團(tuan)放(fang)入一份(fen)餡(xian)(xian)心,做成(cheng)(cheng)(cheng)小圓(yuan)餅(bing)形,入平鍋燒熟。餅(bing)被烙(luo)得(de)兩面(mian)金黃,外皮(pi)(pi)焦(jiao)脆,有(you)玉(yu)米香(xiang),餡(xian)(xian)心油(you)潤而有(you)脂油(you)香(xiang),味鮮(xian)可口。徽州山(shan)區稱餅(bing)為馃(guo),稱玉(yu)米為苞蘆(lu),此餅(bing)用(yong)玉(yu)米粉為皮(pi)(pi)面(mian),故名(ming)“苞蘆(lu)馃(guo)”。“苞蘆(lu)馃(guo)”吃了(le)最耐饑,故深受(shou)體力勞動者的歡(huan)迎。徽州山(shan)區有(you)民謠曰:“手捧(peng)苞蘆(lu)馃(guo),腳踩(cai)一爐(lu)火,除了(le)神(shen)仙(xian)就(jiu)數(shu)我。”傳神(shen)地道出了(le)山(shan)里(li)人偏(pian)愛(ai)吃苞蘆(lu)馃(guo)的習俗(su)。
用(yong)(yong)山(shan)(shan)區的山(shan)(shan)苞(bao)蘆(lu)為主原(yuan)料制(zhi)成(cheng)。山(shan)(shan)苞(bao)蘆(lu)為山(shan)(shan)上(shang)種(zhong)植(zhi)的一種(zhong)玉米(mi),生長期約140天,其味甜(tian)清,營(ying)養(yang)成(cheng)份(fen)高(gao)。將山(shan)(shan)玉米(mi)磨成(cheng)細粉(fen),經細粉(fen)籮(luo)篩去皮層,和(he)水攪(jiao)拌煮成(cheng)糊狀,冷卻凝固,再用(yong)(yong)特制(zhi)的弓刨成(cheng)薄片,然后(hou)將薄片置于竹匾上(shang)曬(shai)干即成(cheng)。食(shi)(shi)用(yong)(yong)時,將薄片投入滾油中炸,薄片舒展(zhan)膨脹上(shang)浮,即可(ke)撈起。“苞(bao)蘆(lu)松”清香松脆(cui),宜作(zuo)茶食(shi)(shi)及佐餐食(shi)(shi)品。
