西河煎(jian)餅,是山東淄博西河鎮著名(ming)的(de)小(xiao)吃(chi)。具有薄如紙(zhi)、色(se)如玉、甘如飴,素雅(ya)柔韌,風味(wei)獨特(te),色(se)澤鮮亮,味(wei)道鮮美,清(qing)香可(ke)口,風味(wei)獨特(te)之特(te)點(dian)。
西河(he)煎餅采用(yong)(yong)傳(chuan)統加工(gong)工(gong)藝,純手(shou)工(gong)制(zhi)作,糧食要(yao)(yao)經(jing)過多次淘洗,一(yi)夜浸泡,然后放入1/3或一(yi)半的(de)孰料(liao),這樣磨(mo)出(chu)的(de)糊子(zi)(zi)才好烙,攤的(de)煎餅才更(geng)爽(shuang)口。磨(mo)糊子(zi)(zi)是(shi)件很費工(gong)夫的(de)事,二三十斤糧食要(yao)(yao)花兩三個小(xiao)時(shi),往磨(mo)眼添料(liao)也得(de)是(shi)有(you)(you)經(jing)驗(yan)的(de)老(lao)手(shou),要(yao)(yao)勤添少添,磨(mo)出(chu)的(de)糊子(zi)(zi)才細膩(ni)均(jun)勻(yun)(yun)。攤烙要(yao)(yao)求的(de)技巧性極高,想練成這一(yi)絕活就得(de)先會使用(yong)(yong)西河(he)人的(de)“三件寶”:鏊(ao)子(zi)(zi)、刮耙(pa)和(he)油(you)擦(ca)。鏊(ao)子(zi)(zi),鐵制(zhi),圓形(xing),中心稍凸,下(xia)有(you)(you)三足(zu),其下(xia)用(yong)(yong)柴草加熱,上面(mian)即可(ke)烙制(zhi)煎餅。刮耙(pa),木制(zhi),版(ban)狀弧形(xing),有(you)(you)柄,把糊子(zi)(zi)舀到熟鏊(ao)子(zi)(zi)上用(yong)(yong)它(ta)薄(bo)薄(bo)地左右攤勻(yun)(yun)。油(you)擦(ca),又稱油(you)搭子(zi)(zi),是(shi)用(yong)(yong)十幾層白(bai)布縫制(zhi)的(de)方形(xing)擦(ca)子(zi)(zi),蘸上食油(you)擦(ca)鏊(ao)子(zi)(zi),防(fang)止(zhi)煎餅粘在鏊(ao)子(zi)(zi)上揭不下(xia)來。
