清乾隆年(nian)間,南充(chong)醬(jiang)園主張德興(xing),見嘉陵江邊盛產芥菜(cai)(cai),他突(tu)發奇(qi)想,將(jiang)新(xin)鮮芥菜(cai)(cai)配(pei)以(yi)鹽和香料(liao),裝(zhuang)入土陶圓壇密封后(hou)放置醬(jiang)園內。事隔三年(nian),恰(qia)逢立春之日,醬(jiang)園內忽然(ran)飄出一股奇(qi)特(te)的(de)香味,原來是那個土陶圓壇突(tu)然(ran)破(po)裂,芳香四(si)溢,沁人心脾,眾人聞(wen)香而(er)至(zhi)紛紛品(pin)嘗(chang),果然(ran)是爽口。此菜(cai)(cai)歷經三個寒(han)冬,立春之日噴香而(er)出,眾人取名(ming)為(wei)"冬菜(cai)(cai)"。一傳十(shi),十(shi)傳百(bai),傳至(zhi)京城,成為(wei)朝廷貢品(pin)。時(shi)有民(min)謠"十(shi)里(li)飄香不是花,順慶府中冬菜(cai)(cai)牙",十(shi)里(li)午南充(chong)冬菜(cai)(cai)由此誕生,經過幾百(bai)年(nian)代代相傳,十(shi)里(li)香南充(chong)冬菜(cai)(cai)成為(wei)四(si)川四(si)大名(ming)菜(cai)(cai)之一。我公司承傳"南充(chong)醬(jiang)園,德興(xing)老號",秉(bing)承百(bai)年(nian)傳統工(gong)藝(yi),發揚光大,使十(shi)里(li)香南充(chong)冬菜(cai)(cai)這一獨特(te)的(de)地方(fang)特(te)日臻完美(mei),名(ming)揚海內外。

南充(chong)(chong)冬(dong)菜(cai)(cai)(cai)譽滿全(quan)國(guo)、四(si)(si)川(chuan)(chuan)四(si)(si)大(da)(da)名(ming)(ming)菜(cai)(cai)(cai)之(zhi)一(yi)。南充(chong)(chong)冬(dong)菜(cai)(cai)(cai)生產加(jia)工(gong)歷史悠久(jiu),距今已有(you)225年(nian)。《南充(chong)(chong)縣(xian)志》中有(you)這樣的記(ji)載:"清(qing)嘉(jia)慶年(nian)間(1796至(zhi)1820),順慶就有(you)冬(dong)菜(cai)(cai)(cai)出售(shou)。""道光(guang)年(nian)間(1821至(zhi)1850),縣(xian)人張德興在(zai)(zai)縣(xian)城經營德興老號醬園(yuan)鋪,制作冬(dong)菜(cai)(cai)(cai),頗有(you)名(ming)(ming)氣。"1981年(nian)南充(chong)(chong)冬(dong)菜(cai)(cai)(cai)在(zai)(zai)四(si)(si)川(chuan)(chuan)省(sheng)"四(si)(si)菜(cai)(cai)(cai)"評比會上,以光(guang)澤油潤、清(qing)香(xiang)脆嫩(nen)、風(feng)味濃郁(yu)取(qu)勝,評為全(quan)省(sheng)第一(yi)名(ming)(ming)。南充(chong)(chong)冬(dong)菜(cai)(cai)(cai)與涪陵榨(zha)菜(cai)(cai)(cai)、宜賓芽菜(cai)(cai)(cai)、內江大(da)(da)頭菜(cai)(cai)(cai)并稱(cheng)為四(si)(si)川(chuan)(chuan)"四(si)(si)大(da)(da)名(ming)(ming)腌菜(cai)(cai)(cai)"。
南充(chong)冬(dong)(dong)(dong)菜(cai)(cai)(cai)(cai)以芥菜(cai)(cai)(cai)(cai)為原料(liao)(liao),花椒、八角(jiao)等香辛料(liao)(liao)為輔料(liao)(liao),經過20道工序,歷時1-3年加工而成。既可用(yong)作餐桌上的(de)小菜(cai)(cai)(cai)(cai),又(you)可作為烹飪的(de)佐料(liao)(liao)使(shi)用(yong)。川菜(cai)(cai)(cai)(cai)中有名的(de)冬(dong)(dong)(dong)菜(cai)(cai)(cai)(cai)扣肉和冬(dong)(dong)(dong)菜(cai)(cai)(cai)(cai)擔(dan)擔(dan)面等都是以南充(chong)冬(dong)(dong)(dong)菜(cai)(cai)(cai)(cai)為主要原料(liao)(liao)。
南充冬菜菜型均勻,褐(he)黑色(se)、油潤、有(you)光澤;具有(you)南充冬菜獨有(you)的醬香味(wei)和辛香味(wei),香氣濃郁(yu);味(wei)道鮮美、質地脆嫩、咸淡適口。富(fu)含氨基酸(suan)、乳(ru)酸(suan)、蛋(dan)白(bai)質、維生素和多種微(wei)量元(yuan)素。有(you)開胃健脾、增(zeng)進食欲(yu)、增(zeng)強人(ren)體(ti)機能之功效(xiao)。
