清乾隆年(nian)間,南(nan)充(chong)醬(jiang)(jiang)園(yuan)(yuan)(yuan)主(zhu)張德興,見嘉陵江邊盛產芥(jie)菜(cai)(cai),他突發奇想,將新鮮(xian)芥(jie)菜(cai)(cai)配以(yi)鹽和香(xiang)料,裝入土(tu)陶(tao)圓壇(tan)密封(feng)后放置醬(jiang)(jiang)園(yuan)(yuan)(yuan)內(nei)。事隔三年(nian),恰逢立(li)春(chun)之日(ri)(ri),醬(jiang)(jiang)園(yuan)(yuan)(yuan)內(nei)忽然(ran)飄出一股奇特(te)的香(xiang)味,原來是(shi)那個土(tu)陶(tao)圓壇(tan)突然(ran)破裂(lie),芳香(xiang)四(si)溢,沁人(ren)心脾,眾人(ren)聞香(xiang)而(er)至紛紛品嘗(chang),果然(ran)是(shi)爽口。此(ci)(ci)菜(cai)(cai)歷經三個寒(han)冬(dong)(dong),立(li)春(chun)之日(ri)(ri)噴(pen)香(xiang)而(er)出,眾人(ren)取名為"冬(dong)(dong)菜(cai)(cai)"。一傳(chuan)十(shi)(shi)(shi),十(shi)(shi)(shi)傳(chuan)百,傳(chuan)至京城,成為朝(chao)廷貢品。時有民謠"十(shi)(shi)(shi)里(li)(li)飄香(xiang)不是(shi)花,順慶府中冬(dong)(dong)菜(cai)(cai)牙",十(shi)(shi)(shi)里(li)(li)午南(nan)充(chong)冬(dong)(dong)菜(cai)(cai)由此(ci)(ci)誕生,經過幾百年(nian)代代相傳(chuan),十(shi)(shi)(shi)里(li)(li)香(xiang)南(nan)充(chong)冬(dong)(dong)菜(cai)(cai)成為四(si)川四(si)大名菜(cai)(cai)之一。我公司(si)承(cheng)傳(chuan)"南(nan)充(chong)醬(jiang)(jiang)園(yuan)(yuan)(yuan),德興老號",秉(bing)承(cheng)百年(nian)傳(chuan)統工藝,發揚光(guang)大,使十(shi)(shi)(shi)里(li)(li)香(xiang)南(nan)充(chong)冬(dong)(dong)菜(cai)(cai)這一獨特(te)的地方特(te)日(ri)(ri)臻完美,名揚海(hai)內(nei)外。

南(nan)充冬(dong)(dong)菜(cai)(cai)譽(yu)滿(man)全國(guo)、四(si)(si)川(chuan)四(si)(si)大(da)名(ming)菜(cai)(cai)之一。南(nan)充冬(dong)(dong)菜(cai)(cai)生產(chan)加(jia)工(gong)歷史悠久,距今已有225年。《南(nan)充縣志》中有這樣的記載:"清(qing)嘉慶年間(jian)(1796至1820),順慶就有冬(dong)(dong)菜(cai)(cai)出售(shou)。""道光(guang)年間(jian)(1821至1850),縣人張德(de)興在縣城(cheng)經(jing)營德(de)興老號醬園鋪(pu),制(zhi)作冬(dong)(dong)菜(cai)(cai),頗有名(ming)氣。"1981年南(nan)充冬(dong)(dong)菜(cai)(cai)在四(si)(si)川(chuan)省"四(si)(si)菜(cai)(cai)"評(ping)比(bi)會上,以光(guang)澤油潤、清(qing)香脆嫩、風味濃郁取勝,評(ping)為全省第一名(ming)。南(nan)充冬(dong)(dong)菜(cai)(cai)與涪陵(ling)榨菜(cai)(cai)、宜賓芽菜(cai)(cai)、內江大(da)頭菜(cai)(cai)并稱為四(si)(si)川(chuan)"四(si)(si)大(da)名(ming)腌(a)菜(cai)(cai)"。
南充冬(dong)(dong)菜(cai)(cai)(cai)以芥菜(cai)(cai)(cai)為(wei)原料(liao),花椒(jiao)、八角等(deng)香辛料(liao)為(wei)輔(fu)料(liao),經過(guo)20道(dao)工序,歷時(shi)1-3年加工而成。既(ji)可(ke)用作餐桌上的(de)小菜(cai)(cai)(cai),又可(ke)作為(wei)烹飪的(de)佐料(liao)使用。川菜(cai)(cai)(cai)中有名(ming)的(de)冬(dong)(dong)菜(cai)(cai)(cai)扣肉和冬(dong)(dong)菜(cai)(cai)(cai)擔(dan)擔(dan)面等(deng)都是以南充冬(dong)(dong)菜(cai)(cai)(cai)為(wei)主要原料(liao)。
南(nan)充(chong)冬菜(cai)菜(cai)型均(jun)勻,褐黑色、油潤(run)、有光澤;具有南(nan)充(chong)冬菜(cai)獨有的醬香(xiang)(xiang)味(wei)和(he)(he)辛(xin)香(xiang)(xiang)味(wei),香(xiang)(xiang)氣(qi)濃郁;味(wei)道(dao)鮮美、質地脆嫩、咸淡適口。富含氨基酸、乳酸、蛋白質、維生素和(he)(he)多種(zhong)微量元素。有開胃健脾、增(zeng)進(jin)食欲、增(zeng)強人體機能之功效。
