西亭脆餅原名(ming)西亭復隆(long)茂白(bai)脆,說起來還有(you)一(yi)段動(dong)人(ren)的故事(shi)呢!從前,在(zai)西亭鎮(zhen)上,有(you)對夫婦開了(le)一(yi)間茶食店(dian),老板是(shi)個做(zuo)(zuo)茶食的好手,能做(zuo)(zuo)各式(shi)各樣(yang)的茶點,妻子照管店(dian)務,勉(mian)強(qiang)養(yang)家糊口。西亭乃是(shi)鄉間小(xiao)鎮(zhen),顧(gu)客大多是(shi)種(zhong)田人(ren),買不起細(xi)貨茶食,夫妻倆商議,要(yao)想把生意(yi)做(zuo)(zuo)活(huo),只有(you)在(zai)粗(cu)貨茶食上做(zuo)(zuo)文章,粗(cu)貨細(xi)做(zuo)(zuo),使產品物美價廉。鄉下人(ren)喜歡(huan)吃(chi)脆餅,他們就在(zai)脆餅上動(dong)腦筋,加(jia)油加(jia)糖,外加(jia)桂(gui)花、桔皮,并將方形改(gai)成長條,上面灑上芝(zhi)麻。此(ci)外,還改(gai)革了(le)筒爐,把握住(zhu)火功,終(zhong)于制作成別具一(yi)格松脆香酥的脆餅。上市后(hou),全鎮(zhen)轟動(dong),倍受顧(gu)客歡(huan)迎。
曾任(ren)清政商務大臣的張謇,因祖居西亭,每(mei)年要回(hui)西亭祭(ji)祖,每(mei)次都要品嘗脆(cui)餅。他除了(le)自己(ji)愛(ai)吃(chi)外,還用脆(cui)餅作(zuo)為(wei)禮品贈送華商、外商及達官(guan)貴人(ren)。西亭脆(cui)餅不(bu)但受到(dao)普通老(lao)(lao)百(bai)姓的歡迎(ying),而且(qie)在皇室中也享有(you)盛(sheng)譽。張謇還親(qin)自為(wei)該店題名"復隆茂號"。老(lao)(lao)板對(dui)此店號非常滿意,覺得它能激勵(li)后輩們苦心經營,不(bu)忘昔日冷落(luo)破產之苦。
西亭(ting)脆(cui)餅(bing)(bing)選用(yong)上等精白面粉為(wei)主料,經二十八道工(gong)序,用(yong)手工(gong)制成。脆(cui)餅(bing)(bing)用(yong)微火烘(hong)烤,表面黃而不焦;脆(cui)餅(bing)(bing)的工(gong)藝考究,每(mei)只餅(bing)(bing)有(you)十八層(ceng)次,君(jun)若不信,用(yong)開(kai)水泡餅(bing)(bing),則層(ceng)次清(qing)晰可見。西亭(ting)脆(cui)餅(bing)(bing)有(you)兩種吃(chi)法(fa):干吃(chi)和用(yong)開(kai)水泡了吃(chi)。干吃(chi)則松脆(cui)香酥,因面上沾有(you)芝麻,所以越嚼越香;用(yong)開(kai)水泡了吃(chi),則鮮甜適口,特別適合老年人(ren)的胃口。

當地(di)群(qun)眾中流傳著(zhu)這(zhe)樣一(yi)首歌謠:“西(xi)亭脆餅十八層,層層分明能照人,上風(feng)吃來下風(feng)聞,香甜酥脆愛煞人。”這(zhe)大概是(shi)對這(zhe)個傳統食品最簡煉概括的寫照和褒獎(jiang)吧(ba)!
西(xi)亭(ting)脆(cui)餅(bing),是通(tong)州(zhou)市的千年(nian)古鎮西(xi)亭(ting)生產的一宗傳(chuan)統特色食品(pin),他初創于(yu)晚清,迄(qi)今(jin)已有(you)一百多年(nian)歷史了。西(xi)亭(ting)脆(cui)餅(bing)每只不(bu)足兩公分厚,竟(jing)有(you)十八層,干(gan)吃,有(you)酥、脆(cui)、香、甜的感覺;泡食,層次不(bu)亂、湯水(shui)不(bu)渾、香味撲鼻,且純正可口(kou)、營養豐富、健(jian)脾開(kai)胃,頗受人們喜(xi)愛(ai)。
香味形俱佳,香甜酥脆,純(chun)正可口,健脾開胃,老(lao)幼皆宜。
面粉加白砂糖,植物油,少(shao)量香油,加水和在一(yi)起,比做手(shou)搟(xian)面要加多點水,比較柔軟一(yi)點,然后切一(yi)塊塊的(de),再手(shou)搟(xian)成圓形的(de)薄皮狀,然后疊起來成長方形,上面撒一(yi)層芝麻就行了。
