大(da)足特(te)產(chan)“寶頂牌冬(dong)菜(cai)”歷經幾代人(ren)的不(bu)(bu)懈(xie)努力逐漸由小做大(da)。為適應時(shi)代的發(fa)展(zhan)(zhan),產(chan)業(ye)的需求,由家庭式作坊到成立重慶市(shi)鼎翔農業(ye)發(fa)展(zhan)(zhan)有(you)限公司(si)。冬(dong)菜(cai)“白(bai)露播種(zhong),立春(chun)收獲(huo)”,整個(ge)種(zhong)植過程不(bu)(bu)使用農藥、化(hua)肥,是綠色食品(pin)。因其生長季節在冬(dong)季,所以稱為“冬(dong)菜(cai)”。“冬(dong)菜(cai)”制(zhi)作工藝復雜(za), 嫩尖腌制(zhi),需裝壇密封,日(ri)曬夜露,自然發(fa)酵三年后才窖熟開(kai)壇。制(zhi)作過程不(bu)(bu)加任(ren)何香精(jing)(jing),色素。成品(pin)色澤黑褐油潤,濃香撲鼻,鮮(xian)嫩脆爽(shuang),素有(you) "七里香","菜(cai)味精(jing)(jing)" 之(zhi)美(mei)稱。
2018年公(gong)(gong)司(si)在(zai)大(da)(da)足區龍(long)棠大(da)(da)道投資(zi)新建(jian)冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)(cai)(cai)(cai)博(bo)物館(guan),整個博(bo)物館(guan)分(fen)兩期建(jian)設(she)總投資(zi)預(yu)計(ji)5500萬(wan)元,2020年8月完(wan)成一期的(de)(de)建(jian)設(she),實際投入資(zi)金2500萬(wan)元,博(bo)物館(guan)是集“產(chan)(chan)(chan)、學、研、觀光旅游(you)”一體的(de)(de)綜合(he)性建(jian)筑,投入使用后將更有(you)力的(de)(de)帶動冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)(cai)(cai)(cai)產(chan)(chan)(chan)業(ye)的(de)(de)發(fa)展。公(gong)(gong)司(si)固定資(zi)產(chan)(chan)(chan)3500多(duo)萬(wan)元,年產(chan)(chan)(chan)值5000萬(wan)元,生產(chan)(chan)(chan)經(jing)營(ying)面(mian)積一萬(wan)余(yu)平方米(mi),四年期以上的(de)(de)半成品(pin)冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)(cai)(cai)(cai)800余(yu)噸(dun),價(jia)值近千萬(wan)元;現有(you)員工(gong)(gong)50人,其(qi)中技術(shu)骨干8人,各種生產(chan)(chan)(chan)、檢(jian)測(ce)機器(qi)設(she)備30余(yu)臺(tai)(套),年生產(chan)(chan)(chan)加(jia)(jia)工(gong)(gong)冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)(cai)(cai)(cai)及系列調(diao)(diao)味品(pin)能力達3000噸(dun);依托“公(gong)(gong)司(si)+種植(zhi)戶+農(nong)戶”的(de)(de)模式,公(gong)(gong)司(si)擁有(you)冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)(cai)(cai)(cai)原料(liao)種植(zhi)基(ji)地5個,面(mian)積6000余(yu)畝,可年產(chan)(chan)(chan)冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)(cai)(cai)(cai)尖原料(liao)2500余(yu)噸(dun)。近幾年來,我(wo)公(gong)(gong)司(si)依托西南大(da)(da)學食品(pin)學院的(de)(de)支持,加(jia)(jia)大(da)(da)了對冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)(cai)(cai)(cai)從原料(liao)種植(zhi),半成品(pin)發(fa)酵,半成品(pin)深(shen)加(jia)(jia)工(gong)(gong)的(de)(de)科技攻關。其(qi)中,在(zai)半成品(pin)深(shen)加(jia)(jia)工(gong)(gong)方面(mian),已開(kai)始擺脫過去只(zhi)賣成品(pin)原料(liao),產(chan)(chan)(chan)品(pin)附(fu)加(jia)(jia)值低的(de)(de)局面(mian),開(kai)發(fa)生產(chan)(chan)(chan)了原味冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)(cai)(cai)(cai)、下飯菜(cai)(cai)(cai)(cai)(cai)(cai)、風味冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)(cai)(cai)(cai)(調(diao)(diao)味類冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)(cai)(cai)(cai))以及禮品(pin)盒冬(dong)(dong)(dong)(dong)菜(cai)(cai)(cai)(cai)(cai)(cai)三大(da)(da)系列共(gong)計(ji)20余(yu)種產(chan)(chan)(chan)品(pin)推向市場,受到廣大(da)(da)消費者的(de)(de)好評。
