它以佩克里(li)諾乳(ru)酪為食(shi)源(yuan),但(dan)跳(tiao)過典型的發酵(jiao)(jiao)程序,直接(jie)由酪蠅幼(you)(you)蟲(chong)(chong)(chong)(chong)的消(xiao)化作用讓(rang)食(shi)材“腐爛”。幼(you)(you)蟲(chong)(chong)(chong)(chong)是刻意添加物,旨在推動一種特殊層次的發酵(jiao)(jiao),并促進(jin)分解(jie)乳(ru)酪中的乳(ru)脂。乳(ru)酪的質(zhi)地(di)隨(sui)后變(bian)得十分柔軟,并滲出些許汁液(lagrima,意為“眼淚”)。幼(you)(you)蟲(chong)(chong)(chong)(chong)是乳(ru)白色、半透明的蠕蟲(chong)(chong)(chong)(chong),長(chang)約8毫(hao)米。幼(you)(you)蟲(chong)(chong)(chong)(chong)在受到(dao)碰觸(chu)時最高(gao)(gao)會跳(tiao)到(dao)15毫(hao)米高(gao)(gao)。食(shi)用乳(ru)酪前可將幼(you)(you)蟲(chong)(chong)(chong)(chong)去除(chu),但(dan)有些饕(tao)客則(ze)選擇保留蟲(chong)(chong)(chong)(chong)體。
對人體影響
這種(zhong)乳(ru)酪(lao)因其(qi)對人(ren)健康(kang)有影響,甚至在發源地(di)都(dou)是禁(jin)售(shou)的(de)。實際上(shang),出售(shou)這種(zhong)乳(ru)酪(lao)的(de)黑(hei)市很多。牧羊人(ren)通過生產少(shao)量的(de)乳(ru)酪(lao)來(lai)奪(duo)得商機,同時(shi)滿足(zu)那些口味獵奇的(de)人(ren)們(men)。

注意
蛆蟲受觸碰時,可跳(tiao)出(chu)其(qi)身長兩倍的距離。如果蛆蟲沒有(you)蠕動,說(shuo)明(ming)乳酪(lao)已經有(you)毒,不可食用。
