名稱來歷
龍(long)(long)窖(jiao)醬(jiang)菜因龍(long)(long)窖(jiao)山(shan)而得名(ming),主(zhu)要包(bao)括榨菜和蘿卜兩個品種。據考(kao)證(zheng)龍(long)(long)窖(jiao)山(shan)是(shi)瑤文(wen)化的(de)發源地(di),位(wei)于(yu)湖(hu)(hu)南(nan)省臨湘市區東南(nan),一(yi)(yi)直是(shi)醬(jiang)菜的(de)主(zhu)產區,以(yi)盛產龍(long)(long)窖(jiao)醬(jiang)菜出名(ming)。臨湘龍(long)(long)窖(jiao)山(shan)屬幕阜山(shan)余脈(mo)(mo),山(shan)林(lin)面積10.5萬(wan)畝,最高峰海拔1261.1米,山(shan)勢(shi)高峻、澗深洞(dong)長、蜿(wan)蜒百里(li)(li),是(shi)為(wei)避難秘地(di)、世(shi)外桃源。瑤胞(bao)們(men)在(zai)(zai)這(zhe)里(li)(li)留(liu)下了令人嘆為(wei)觀止的(de)文(wen)化遺跡。這(zhe)個“養在(zai)(zai)深閨(gui)人未識(shi)”的(de)瑤族理想家(jia)園“千(qian)家(jia)峒”原來就在(zai)(zai)湖(hu)(hu)南(nan)臨湘,遺存的(de)大量石器(qi)和種植物種,龍(long)(long)窖(jiao)山(shan)脈(mo)(mo)內家(jia)家(jia)戶戶都有腌制蔬菜的(de)傳統習慣。龍(long)(long)窖(jiao)山(shan)脈(mo)(mo)在(zai)(zai)臨湘境內蜿(wan)蜒起伏,龍(long)(long)窖(jiao)水源現(xian)已成為(wei)臨湘市的(de)飲(yin)用取(qu)水源,不僅惠(hui)澤臨湘市內,還輻(fu)射到周(zhou)邊的(de)縣區,龍(long)(long)窖(jiao)醬(jiang)菜就是(shi)這(zhe)些燦爛歷史(shi)文(wen)化的(de)一(yi)(yi)種延續。
歷史淵源
龍(long)(long)窖(jiao)(jiao)醬(jiang)菜(cai)(cai)生產(chan)歷史悠久,最(zui)早可追溯到(dao)神(shen)(shen)農(nong)嘗百(bai)(bai)草的(de)傳說,一(yi)日來(lai)(lai)到(dao)洞庭湖東(dong)畔,幕阜山(shan)(shan)(shan)余脈一(yi)處(chu)(今(jin)湖南臨湘(xiang)龍(long)(long)窖(jiao)(jiao)山(shan)(shan)(shan)),但見瀑布飛瀉,林木蔥郁,奇花(hua)異草滿山(shan)(shan)(shan)遍野(ye)(ye),甚感好山(shan)(shan)(shan)好景,環(huan)顧山(shan)(shan)(shan)野(ye)(ye)住民(min),卻(que)是(shi)饑不(bu)裹腹,哀鴻(hong)遍野(ye)(ye),神(shen)(shen)農(nong)氏(shi)百(bai)(bai)思不(bu)得其(qi)解,看此(ci)(ci)(ci)處(chu)土地肥沃,氣候宜(yi)人,但是(shi)百(bai)(bai)姓生活卻(que)十分艱辛(xin)。尋人細問,原來(lai)(lai)此(ci)(ci)(ci)處(chu)確實(shi)物產(chan)豐富,但每到(dao)春末夏初,正是(shi)青黃不(bu)接(jie)之(zhi)時(shi),冬季作物已衰敗,春季作物尚未長成,人們無處(chu)取食(shi),神(shen)(shen)農(nong)氏(shi)了解原委后,就在(zai)山(shan)(shan)(shan)野(ye)(ye)找一(yi)石洞暫居下來(lai)(lai),隨村(cun)民(min)一(yi)起日出而作,日落(luo)而息,大(da)量種植(zhi)谷物與(yu)蔬菜(cai)(cai),待到(dao)豐收(shou)之(zhi)時(shi),教村(cun)民(min)將(jiang)谷物曬(shai)干(gan)囤積,將(jiang)蘿卜(bu)、榨(zha)菜(cai)(cai)等蔬菜(cai)(cai)采(cai)摘灑鹽(yan)置(zhi)于石洞中(zhong)扎緊保存(cun)。到(dao)來(lai)(lai)年青黃不(bu)接(jie)時(shi),開(kai)窖(jiao)(jiao)取菜(cai)(cai),則醬(jiang)香撲鼻,菜(cai)(cai)體(ti)完(wan)(wan)好,從此(ci)(ci)(ci)鄉(xiang)民(min)無食(shi)物之(zhi)憂。當(dang)地村(cun)民(min)為感謝(xie)神(shen)(shen)農(nong)氏(shi)恩德,便將(jiang)神(shen)(shen)農(nong)氏(shi)當(dang)年所(suo)居石洞稱為“龍(long)(long)窖(jiao)(jiao)”,將(jiang)神(shen)(shen)農(nong)氏(shi)窖(jiao)(jiao)藏之(zhi)法所(suo)得的(de)蔬菜(cai)(cai)稱之(zhi)為“龍(long)(long)窖(jiao)(jiao)醬(jiang)菜(cai)(cai)”。從此(ci)(ci)(ci)以后家家戶(hu)戶(hu)都將(jiang)吃不(bu)完(wan)(wan)的(de)蔬菜(cai)(cai)按此(ci)(ci)(ci)法進行儲藏蔬菜(cai)(cai),“龍(long)(long)窖(jiao)(jiao)醬(jiang)菜(cai)(cai)”也(ye)從此(ci)(ci)(ci)流傳至今(jin)。
關于(yu)龍(long)(long)窖醬(jiang)菜(cai)制作的(de)(de)歷史十分久遠,已無從(cong)考證,據(ju)臨湘鄉間(jian)盛傳的(de)(de)民間(jian)傳說在三國(guo)時期(qi)就有早期(qi)龍(long)(long)窖醬(jiang)菜(cai)制作過(guo)程和故(gu)事的(de)(de)記載:公元208年,三國(guo)東(dong)吳大(da)(da)將(jiang)黃蓋臨危受命,秘密(mi)(mi)進(jin)駐下雋縣(xian)(今湖南省臨湘市)。這里湖泊浩渺,湖垸(huan)眾多,黃蓋在此(ci)操練水軍,當(dang)時軍需物資(zi)潰(kui)乏(fa),既備(bei)戰(zhan)(zhan)又備(bei)荒,將(jiang)士們生(sheng)產大(da)(da)量糧(liang)1蔬,以應戰(zhan)(zhan)時之需。為戰(zhan)(zhan)備(bei)需要(yao)他們將(jiang)蔬菜(cai)進(jin)行腌制,用土(tu)壇裝(zhuang)好,和黃泥(ni)密(mi)(mi)封,埋于(yu)山(shan)邊(bian)湖畔(pan),經七(qi)七(qi)四十九天后取(qu)出,將(jiang)士食之味口頓開(kai),士氣大(da)(da)振。三國(guo)相爭,都(dou)以真(zhen)龍(long)(long)天子自居(ju),因此(ci)軍中(zhong)以龍(long)(long)為名(ming)窖藏,此(ci)地又靠近龍(long)(long)窖山(shan),因此(ci)得名(ming)龍(long)(long)窖醬(jiang)菜(cai)。
但(dan)根據現可(ke)(ke)查(cha)證的資料可(ke)(ke)追溯到宋代(dai),宋代(dai)范(fan)致(zhi)明《岳陽風土記》:“龍(long)窖(jiao)山(shan)(shan)(shan)在(臨湘)縣東南,按(an)鄂州崇陽縣,雷家洞、石門(men)洞,山(shan)(shan)(shan)極深遠(yuan)。其間居(ju)民謂之鳥鄉,語言侏離,以耕(geng)畬為(wei)(wei)業,磨豆腌菜為(wei)(wei)食(shi)。非市(shi)鹽茶不入(ru)城市(shi)邑,亦無貢賦(fu),蓋山(shan)(shan)(shan)瑤(yao)人也。”再(zai)是(shi)宋馬子嚴《岳陽甲志》:“龍(long)窖(jiao)山(shan)(shan)(shan)在巴陵北,山(shan)(shan)(shan)實峻極。山(shan)(shan)(shan)有雷洞,有石門(men)之洞,山(shan)(shan)(shan)瑤(yao)居(ju)之,自耕(geng)而食(shi),植(zhi)蔬(shu)植(zhi)豆,自織而衣”。
據康熙《臨湘縣志(zhi)》記載(zai):黃蓋湖產醬菜,曰龍窖,歲貢九壇。
生產地域地理特征
該地域位(wei)于湖南省東(dong)北(bei)(bei)部,長江(jiang)中游南岸(an),地處北(bei)(bei)緯29°10′~29°52′、東(dong)經(jing)113°15′~113°45′。地處北(bei)(bei)亞熱帶氣(qi)候帶,屬于亞熱帶季(ji)(ji)風性濕(shi)(shi)潤氣(qi)候,氣(qi)候溫(wen)和濕(shi)(shi)潤,雨量充(chong)沛,四(si)季(ji)(ji)分明。春(chun)季(ji)(ji)溫(wen)暖(nuan),陰濕(shi)(shi)多雨,常為春(chun)雨綿(mian)綿(mian),麻雨稀(xi)稀(xi)的(de)天(tian)氣(qi)。夏無酷暑,盛(sheng)吹南風。秋季(ji)(ji)涼(liang)爽,時有小雨。冬季(ji)(ji)冷濕(shi)(shi)無嚴(yan)寒,平(ping)均(jun)氣(qi)溫(wen)小于或等于0℃,每年不超過5天(tian),晴朗天(tian)氣(qi),時有小雨。這種氣(qi)候條件十(shi)分適(shi)宜農作物、蔬(shu)菜、豆類(lei)的(de)生長,也(ye)為醬菜發酵提供了天(tian)然的(de)環境。
因(yin)(yin)長期(qi)受自(zi)然(ran)因(yin)(yin)素和(he)人為因(yin)(yin)素等影響(xiang),擬保護(hu)區域內內紅壤和(he)黃棕壤,土層深厚,養分豐富(fu),呈(cheng)酸性(xing)及弱(ruo)酸性(xing),有(you)機含量較高,十分有(you)利于榨菜(cai)和(he)蘿卜等蔬菜(cai)的(de)(de)生長。土壤富(fu)含養分量及水平分別(bie)為:有(you)機質31.5 g/kg、有(you)效(xiao)磷17 mg/kg、速效(xiao)鉀69mg/kg、全氮(dan)2.0 g/kg、堿解氮(dan)189 mg/kg,特別(bie)有(you)利于種(zhong)植蔬菜(cai)等植物。新鮮的(de)(de)蔬菜(cai)原料,特定環境(jing)下的(de)(de)傳(chuan)統工藝,使龍窖(jiao)醬菜(cai)鮮嫰爽(shuang)脆的(de)(de)獨有(you)風(feng)味(wei)。

龍(long)窖醬菜具有“色澤(ze)光亮(liang),壇香綿長,爽脆可口,咸淡適中”的(de)獨(du)特品(pin)質,醬菜外觀(guan)顏(yan)色鮮亮(liang)有光澤(ze),經(jing)窖藏發酵后壇香味(wei)濃郁,嘗之口感鮮爽脆嫩,咸淡適中,余(yu)味(wei)綿長。
