金(jin)灣紫(zi)菜是廣東珠(zhu)海的特產,金(jin)灣紫(zi)菜是一種大形紅藻(zao),屬低等植(zhi)物、海藻(zao)類(lei)蔬菜。以葉狀(zhuang)體作蔬菜食用。
中(zhong)(zhong)(zhong)國(guo)傳(chuan)統醫學認為,紫(zi)(zi)菜(cai)性寒,能化痰軟堅,清熱利(li)尿,養心降壓。現(xian)代研究發現(xian),紫(zi)(zi)菜(cai)營(ying)養豐富(fu),高(gao)蛋白(bai)(100克(ke)干(gan)(gan)紫(zi)(zi)菜(cai)中(zhong)(zhong)(zhong)含26.7克(ke))、低脂(zhi)肪(fang)(100克(ke)干(gan)(gan)紫(zi)(zi)菜(cai)中(zhong)(zhong)(zhong)含1.1克(ke))、高(gao)膳食纖維(100克(ke)干(gan)(gan)紫(zi)(zi)菜(cai)中(zhong)(zhong)(zhong)含40克(ke)以上)。同時,紫(zi)(zi)菜(cai)的蛋白(bai)質組(zu)成(cheng)中(zhong)(zhong)(zhong),谷氨酸(suan)、天冬氨酸(suan)等呈鮮味成(cheng)分(fen)含量高(gao),100克(ke)干(gan)(gan)紫(zi)(zi)菜(cai)中(zhong)(zhong)(zhong),含谷氨酸(suan)2043毫克(ke),天冬氨酸(suan)2050毫克(ke),所以吃起來格外鮮。
