青(qing)(qing)島(dao)作為2008年北(bei)京奧運會伙伴城市(shi)(shi),近(jin)年來(lai)經濟(ji)文化(hua)發(fa)(fa)(fa)展(zhan)迅速(su)。同時(shi)青(qing)(qing)島(dao)市(shi)(shi)委市(shi)(shi)政(zheng)府十分重視飲(yin)(yin)(yin)食(shi)(shi)文化(hua)的(de)(de)發(fa)(fa)(fa)展(zhan),積極推進(jin)餐(can)(can)(can)(can)(can)飲(yin)(yin)(yin)休(xiu)(xiu)閑街(jie)(jie)、美(mei)食(shi)(shi)街(jie)(jie)、啤(pi)(pi)酒(jiu)(jiu)文化(hua)街(jie)(jie)建設,以(yi)此為媒介推進(jin)“帆船(chuan)之都”——青(qing)(qing)島(dao)飲(yin)(yin)(yin)食(shi)(shi)文化(hua)的(de)(de)發(fa)(fa)(fa)展(zhan)。閩(min)江路(lu)位于(yu)市(shi)(shi)南(nan)區(qu)(qu)東(dong)部,與云(yun)(yun)霄(xiao)路(lu)美(mei)食(shi)(shi)街(jie)(jie)相交,西起南(nan)京路(lu)東(dong)至(zhi)燕兒島(dao)路(lu)段,長約1800多米,共有(you)各(ge)類門店(dian)(dian)(dian)(dian)(dian)約300家(jia)(jia)(jia)(jia),其中(zhong)(zhong)餐(can)(can)(can)(can)(can)飲(yin)(yin)(yin)門店(dian)(dian)(dian)(dian)(dian)80余(yu)家(jia)(jia)(jia)(jia)。這(zhe)是一(yi)條以(yi)餐(can)(can)(can)(can)(can)飲(yin)(yin)(yin)和(he)(he)休(xiu)(xiu)閑娛樂為特(te)色(se)的(de)(de)專(zhuan)業特(te)色(se)街(jie)(jie)。西段三寶(bao)粥(zhou)店(dian)(dian)(dian)(dian)(dian)、茶(cha)苑粥(zhou)店(dian)(dian)(dian)(dian)(dian)、莊媽媽店(dian)(dian)(dian)(dian)(dian)、老轉村酒(jiu)(jiu)店(dian)(dian)(dian)(dian)(dian)等(deng)50余(yu)家(jia)(jia)(jia)(jia)以(yi)餐(can)(can)(can)(can)(can)飲(yin)(yin)(yin)為主要(yao)特(te)色(se);東(dong)段以(yi)酒(jiu)(jiu)吧、咖啡館(guan)(guan)、茶(cha)樓、KTV等(deng)網點以(yi)休(xiu)(xiu)閑娛樂為主。自1999年市(shi)(shi)政(zheng)府將云(yun)(yun)霄(xiao)路(lu)納入規(gui)劃發(fa)(fa)(fa)展(zhan)小(xiao)吃(chi)(chi)(chi)街(jie)(jie)以(yi)來(lai),云(yun)(yun)霄(xiao)路(lu)美(mei)食(shi)(shi)街(jie)(jie)快速(su)發(fa)(fa)(fa)展(zhan),現有(you)餐(can)(can)(can)(can)(can)飲(yin)(yin)(yin)門店(dian)(dian)(dian)(dian)(dian)60余(yu)家(jia)(jia)(jia)(jia)。位于(yu)市(shi)(shi)北(bei)區(qu)(qu)登州路(lu)的(de)(de)啤(pi)(pi)酒(jiu)(jiu)文化(hua)街(jie)(jie),發(fa)(fa)(fa)展(zhan)也(ye)非常迅速(su),現共有(you)各(ge)類門店(dian)(dian)(dian)(dian)(dian)約50處(chu)(chu),其中(zhong)(zhong)酒(jiu)(jiu)店(dian)(dian)(dian)(dian)(dian)、啤(pi)(pi)酒(jiu)(jiu)店(dian)(dian)(dian)(dian)(dian)、飯(fan)店(dian)(dian)(dian)(dian)(dian)20余(yu)處(chu)(chu)。還有(you)新湛小(xiao)吃(chi)(chi)(chi)街(jie)(jie)、海博民俗(su)(su)美(mei)食(shi)(shi)街(jie)(jie)、海云(yun)(yun)庵民俗(su)(su)小(xiao)吃(chi)(chi)(chi)城、青(qing)(qing)島(dao)飯(fan)店(dian)(dian)(dian)(dian)(dian)“劈柴院(yuan)”小(xiao)吃(chi)(chi)(chi)街(jie)(jie)、大(da)麥島(dao)海鮮城、匯泉小(xiao)吃(chi)(chi)(chi)街(jie)(jie)、長安食(shi)(shi)街(jie)(jie)等(deng),薈萃八方風味,成為美(mei)食(shi)(shi)家(jia)(jia)(jia)(jia)的(de)(de)天(tian)堂。據市(shi)(shi)場調查統計,青(qing)(qing)島(dao)市(shi)(shi)共有(you)各(ge)類餐(can)(can)(can)(can)(can)館(guan)(guan)1854家(jia)(jia)(jia)(jia),其中(zhong)(zhong)市(shi)(shi)南(nan)區(qu)(qu)有(you)871家(jia)(jia)(jia)(jia)餐(can)(can)(can)(can)(can)館(guan)(guan),市(shi)(shi)北(bei)區(qu)(qu)有(you)488家(jia)(jia)(jia)(jia)餐(can)(can)(can)(can)(can)館(guan)(guan),四(si)方區(qu)(qu)有(you)112家(jia)(jia)(jia)(jia)餐(can)(can)(can)(can)(can)館(guan)(guan),李滄區(qu)(qu)有(you)101家(jia)(jia)(jia)(jia)餐(can)(can)(can)(can)(can)館(guan)(guan),嶗山區(qu)(qu)有(you)124家(jia)(jia)(jia)(jia)餐(can)(can)(can)(can)(can)館(guan)(guan),開(kai)發(fa)(fa)(fa)區(qu)(qu)有(you)50家(jia)(jia)(jia)(jia)餐(can)(can)(can)(can)(can)館(guan)(guan),近(jin)郊有(you)108家(jia)(jia)(jia)(jia)餐(can)(can)(can)(can)(can)館(guan)(guan)。這(zhe)些飯(fan)店(dian)(dian)(dian)(dian)(dian)和(he)(he)美(mei)食(shi)(shi)街(jie)(jie)不僅滿足(zu)了周圍(wei)居民的(de)(de)消費休(xiu)(xiu)閑需要(yao),也(ye)促進(jin)了經濟(ji)的(de)(de)繁(fan)榮,成為廣大(da)居民提高(gao)消費水平,品嘗(chang)新鮮美(mei)味,歡聚親朋好(hao)友的(de)(de)好(hao)去處(chu)(chu),極大(da)地推動了青(qing)(qing)島(dao)飲(yin)(yin)(yin)食(shi)(shi)文化(hua)的(de)(de)發(fa)(fa)(fa)展(zhan)。

第五,青島飲食的不足是缺乏品牌意識,菜系品種單一,競爭力不強,人才資源不足等,這些都影響著飲食文化向更高領域發展。
作為青(qing)島城(cheng)市文(wen)(wen)(wen)化(hua)(hua)的重(zhong)要組成(cheng)部分,飲(yin)(yin)(yin)食(shi)文(wen)(wen)(wen)化(hua)(hua)也為青(qing)島城(cheng)市文(wen)(wen)(wen)化(hua)(hua)的和諧發(fa)(fa)(fa)展(zhan)(zhan)做出了貢獻。但是其(qi)中也有一些不足(zu)之處(chu)。總的看來,青(qing)島飲(yin)(yin)(yin)食(shi)仍缺(que)乏品(pin)牌意(yi)識(shi),沒(mei)(mei)(mei)有聞名全國的菜(cai)品(pin),沒(mei)(mei)(mei)有可(ke)令人(ren)們回味無窮的品(pin)牌,只是單一地突現(xian)海(hai)鮮、展(zhan)(zhan)現(xian)魯菜(cai)青(qing)島菜(cai)系的特色,沒(mei)(mei)(mei)有打造出青(qing)島飲(yin)(yin)(yin)食(shi)文(wen)(wen)(wen)化(hua)(hua)的整體優勢,這樣(yang),在(zai)(zai)與其(qi)它(ta)菜(cai)系競爭(zheng)的過程中缺(que)乏核心競爭(zheng)力(li),從而影(ying)響著青(qing)島飲(yin)(yin)(yin)食(shi)文(wen)(wen)(wen)化(hua)(hua)向更(geng)高領域發(fa)(fa)(fa)展(zhan)(zhan)。同(tong)時,缺(que)乏一批掌握青(qing)島飲(yin)(yin)(yin)食(shi)文(wen)(wen)(wen)化(hua)(hua)的高級專門人(ren)才,不能很好地把(ba)飲(yin)(yin)(yin)食(shi)文(wen)(wen)(wen)化(hua)(hua)繼承傳播下(xia)去(qu)。駐青(qing)高校中很少有專門研究飲(yin)(yin)(yin)食(shi)文(wen)(wen)(wen)化(hua)(hua)的專家學(xue)者,對于飲(yin)(yin)(yin)食(shi)文(wen)(wen)(wen)化(hua)(hua)的專門人(ren)才,還沒(mei)(mei)(mei)有形成(cheng)完(wan)善(shan)的培養管(guan)理體系,這就使得青(qing)島飲(yin)(yin)(yin)食(shi)文(wen)(wen)(wen)化(hua)(hua)發(fa)(fa)(fa)展(zhan)(zhan)缺(que)乏內在(zai)(zai)的動力(li)和活力(li)。
