上(shang)海(hai)德(de)(de)興(xing)(xing)(xing)面(mian)(mian)館(guan)(guan)原名德(de)(de)興(xing)(xing)(xing)館(guan)(guan),始創于一八七八年,是以蘇(su)錫邦面(mian)(mian)點(dian)享譽(yu)申城的(de)(de)百年老店(dian)。其燜肉秘(mi)方,據說來(lai)自宮廷御廚,德(de)(de)興(xing)(xing)(xing)館(guan)(guan)在原汁原味的(de)(de)基礎上(shang)進(jin)一步拓(tuo)展傳(chuan)統(tong)口味。目前(qian),裝修一新的(de)(de)德(de)(de)興(xing)(xing)(xing)面(mian)(mian)館(guan)(guan)環境(jing)古(gu)樸典雅(ya),供應(ying)品種已由(you)“面(mian)(mian)”向(xiang)本幫桌菜和大眾小吃(chi)發展,從(cong)傳(chuan)統(tong)特色湯麺、鮮肉月(yue)餅(bing)(bing)、粽子等(deng),到(dao)紅燒鮰(hui)魚、八寶(bao)辣醬(jiang)等(deng)中檔菜肴一應(ying)俱全。此外,德(de)(de)興(xing)(xing)(xing)面(mian)(mian)館(guan)(guan)還增設外賣(mai)部,供應(ying)切面(mian)(mian)、餛(hun)飩皮和餡、鮮肉、素菜包(bao)子、芝麻薄脆餅(bing)(bing)、德(de)(de)興(xing)(xing)(xing)燜蹄(ti)、爆魚、素鴨等(deng)現燒現賣(mai)的(de)(de)熟食和糕(gao)點(dian)。
德興面(mian)(mian)(mian)館以面(mian)(mian)(mian)點、澆(jiao)頭、湯料優(you)質(zhi)(zhi)取勝,自制(zhi)面(mian)(mian)(mian)條(tiao),軟(ruan)韌爽(shuang)滑,久(jiu)煮不糊(hu)。其(qi)蘇錫幫特色澆(jiao)頭麺有(you)紅二(er)鮮(xian)大(da)(da)面(mian)(mian)(mian)、鱔鴛(yuan)鴦(yang)大(da)(da)面(mian)(mian)(mian)、燜(men)蹄二(er)鮮(xian)大(da)(da)面(mian)(mian)(mian)等(deng)40多種(zhong)品種(zhong)和節令冷麺(“大(da)(da)”是長壽(shou)的意(yi)思(si))。其(qi)聞名遐邇的燜(men)肉、燜(men)蹄、爆(bao)魚、爆(bao)鱔四大(da)(da)系列面(mian)(mian)(mian)交頭,前(qian)二(er)種(zhong)肉質(zhi)(zhi)鮮(xian)嫩酥軟(ruan),入(ru)口即(ji)化;后兩種(zhong)咸甜(tian)適度,原(yuan)(yuan)汁原(yuan)(yuan)味(wei),軟(ruan)、鮮(xian)、香,獨(du)有(you)風味(wei)。上乘菜肴(yao)是上海風味(wei)紅燒(shao)鮰魚,八寶辣醬(jiang),油爆(bao)河蝦等(deng)更是別具(ju)一格。德興鮮(xian)肉月餅06年至今連年榮(rong)獲上海名特優(you)月餅,精選豬(zhu)腿肉,秘制(zhi)原(yuan)(yuan)汁原(yuan)(yuan)味(wei)醬(jiang)料調配,口感較佳,深受消(xiao)費(fei)者喜(xi)愛。
