隴(long)(long)(long)縣(xian)暖(nuan)(nuan)鍋是陜(shan)西省(sheng)寶雞(ji)市(shi)隴(long)(long)(long)縣(xian)的特色(se)美食,隴(long)(long)(long)縣(xian)暖(nuan)(nuan)鍋的由來(lai)歷史已(yi)久,據(ju)說可追溯到清代。當(dang)時(shi)一位皇宮寵妃在冬季經過(guo)隴(long)(long)(long)州,品嘗過(guo)后大(da)加贊賞,因膛中有(you)火,故賜名(ming)“暖(nuan)(nuan)鍋”。
隴縣暖鍋(guo)通常用紫銅或導熱(re)性最(zui)強的黃銅制成,暖鍋(guo)上桌后(hou)點燃放置在底部(bu)的木(mu)炭(tan),紅(hong)色的火(huo)苗從(cong)圓筒中(zhong)間(jian)竄(cuan)出來(lai),暖鍋(guo)中(zhong)發出滋(zi)滋(zi)的響聲。因鍋(guo)膛通風,炭(tan)火(huo)會越(yue)燒越(yue)旺(wang),從(cong)而保證(zheng)鍋(guo)內(nei)菜(cai)肴熱(re)乎(hu),可(ke)謂味從(cong)煮中(zhong)來(lai),香自火(huo)中(zhong)生。
隨著暖鍋(guo)漸漸沸騰,濃濃的(de)(de)(de)湯(tang)汁、白白的(de)(de)(de)蒸(zheng)汽、金黃(huang)的(de)(de)(de)油汁順鍋(guo)邊慢慢溢出(chu),立時香(xiang)味(wei)(wei)撲鼻。揭開鍋(guo)蓋(gai),上(shang)面一(yi)層層的(de)(de)(de)排(pai)骨或肥腸、丸子等,吃(chi)上(shang)一(yi)口(kou)唇齒(chi)留香(xiang)。吃(chi)的(de)(de)(de)過(guo)程中,再來上(shang)幾(ji)片烤(kao)至(zhi)金黃(huang)的(de)(de)(de)饃片,別提多美了。最后再盛碗蔥花湯(tang)喝下,頓時渾身舒坦。“圍爐(lu)聚炊(chui)歡呼(hu)處,百味(wei)(wei)消融小(xiao)釜中”,每年(nian)秋(qiu)冬季(ji),一(yi)家人圍在一(yi)起吃(chi)個暖鍋(guo),紅(hong)紅(hong)火(huo)火(huo),熱熱鬧(nao)鬧(nao),家庭儀式感十(shi)足。
