以前天津(jin)人探(tan)親訪友的時候要攜(xie)帶(dai)禮物(wu),講究(jiu)送"八件"。
傳(chuan)統的(de)八件包括福字餅(bing)(bing)、祿字餅(bing)(bing)、壽字餅(bing)(bing)、喜(xi)字餅(bing)(bing)、如意、棗花、聚寶盆、蝦酥(su),采用(yong)山楂、玫瑰、青梅、白糖、豆沙(sha)、棗泥、椒(jiao)鹽、葡萄干等八種餡心,外裹以含食油的(de)面,放(fang)在各(ge)種圖案的(de)印模里精心烤制而成。
"八(ba)(ba)件"其中又(you)有大(da)八(ba)(ba)件兒(er)和小(xiao)(xiao)(xiao)(xiao)八(ba)(ba)件兒(er)之分。大(da)八(ba)(ba)件兒(er)包括棗(zao)花、福字、祿字、壽字、喜字、卷酥(su)、核桃(tao)(tao)酥(su)、蠟餅;八(ba)(ba)小(xiao)(xiao)(xiao)(xiao)件包括棗(zao)方子、杏仁酥(su)、小(xiao)(xiao)(xiao)(xiao)柿子、小(xiao)(xiao)(xiao)(xiao)桃(tao)(tao)、小(xiao)(xiao)(xiao)(xiao)杏、小(xiao)(xiao)(xiao)(xiao)石榴、小(xiao)(xiao)(xiao)(xiao)蘋果、小(xiao)(xiao)(xiao)(xiao)核桃(tao)(tao)。
隨著(zhu)時代的發展,“八(ba)件”也在不(bu)斷推陳出(chu)新(xin),一些新(xin)品種(zhong)也加(jia)入到“八(ba)件”的行列中,且分(fen)類更(geng)為細(xi)致。
1、制(zhi)作(zuo)原料不同:京八件(jian)(jian)以(yi)棗(zao)泥、青梅(mei)、葡萄干(gan)、玫瑰、豆沙、白糖、香蕉、椒鹽(yan)等八種原料為(wei)餡,用(yong)豬油(you)、水和(he)面(mian)做皮(pi),以(yi)皮(pi)包(bao)餡,烘烤而成(cheng);津(jin)八件(jian)(jian)采用(yong)山楂(zha)、玫瑰、青梅(mei)、白糖、豆沙、棗(zao)泥、椒鹽(yan)、葡萄干(gan)等八種餡心,外(wai)裹以(yi)含食油(you)的面(mian),放在(zai)各種圖(tu)案的印模里精(jing)心烤制(zhi)而成(cheng)。
2、類別(bie)不同:京八(ba)(ba)(ba)件(jian)(jian)(jian)(jian)分為大(da)八(ba)(ba)(ba)件(jian)(jian)(jian)(jian)、酒皮(pi)八(ba)(ba)(ba)件(jian)(jian)(jian)(jian)、酥皮(pi)八(ba)(ba)(ba)件(jian)(jian)(jian)(jian)和(he)小八(ba)(ba)(ba)件(jian)(jian)(jian)(jian);津八(ba)(ba)(ba)件(jian)(jian)(jian)(jian)分為大(da)八(ba)(ba)(ba)件(jian)(jian)(jian)(jian)、小八(ba)(ba)(ba)件(jian)(jian)(jian)(jian)和(he)后來的高檔細八(ba)(ba)(ba)件(jian)(jian)(jian)(jian)。
