2020年6月(yue)19日,貴州(zhou)省市場監管局發(fa)布了關(guan)于端午節(jie)食用粽子的消費提(ti)示,提(ti)醒消費者在選購、烹飪、儲存(cun)和食用粽子等(deng)環節(jie)中(zhong)需要注意的事項。
一、選擇正規渠道購買具有清晰標識的粽子產品
消費者(zhe)在選(xuan)購粽(zong)(zong)子(zi)時(shi)應從正規渠道購買(mai)。粽(zong)(zong)子(zi)的(de)(de)(de)尖角容(rong)易(yi)刺破軟包裝(zhuang)(zhuang)材料(liao),一旦(dan)破損,易(yi)造成(cheng)細(xi)菌(jun)侵入從而引起粽(zong)(zong)子(zi)變(bian)質。因此消費者(zhe)在挑(tiao)選(xuan)時(shi),需(xu)查看真空包裝(zhuang)(zhuang)粽(zong)(zong)子(zi)、塑(su)料(liao)袋(dai)或(huo)(huo)鋁箔袋(dai)粽(zong)(zong)子(zi)的(de)(de)(de)包裝(zhuang)(zhuang)是否(fou)完好(hao),要(yao)(yao)注(zhu)意(yi)觀察包裝(zhuang)(zhuang)袋(dai)是否(fou)有破損、漏氣或(huo)(huo)脹袋(dai)等(deng)現象。還要(yao)(yao)鼻聞粽(zong)(zong)子(zi)是否(fou)有霉味(wei)等(deng)其(qi)它(ta)異味(wei),清(qing)香味(wei)濃(nong)郁的(de)(de)(de)粽(zong)(zong)子(zi)食用(yong)時(shi)風味(wei)更好(hao)。同時(shi),要(yao)(yao)注(zhu)意(yi)觀察粽(zong)(zong)子(zi)外包裝(zhuang)(zhuang)是否(fou)有印(yin)刷清(qing)晰(xi)的(de)(de)(de)廠(chang)名(ming)、廠(chang)址(zhi)及(ji)生產日期(qi)(qi)(qi)和保(bao)質期(qi)(qi)(qi)等(deng)。尤其(qi)是新鮮粽(zong)(zong)子(zi),由于其(qi)保(bao)質期(qi)(qi)(qi)較(jiao)短,要(yao)(yao)盡可能挑(tiao)選(xuan)出廠(chang)時(shi)間(jian)較(jiao)近的(de)(de)(de)產品。
二、不過度追求粽葉顏色,注意煮熟煮透粽子
粽葉過度鮮(xian)綠,并不(bu)真實自(zi)然。粽葉經過高(gao)溫蒸煮后(hou)綠色(se)會褪去(qu)一些,略發黃,屬正常(chang)現象(xiang)。消費者(zhe)在(zai)購買粽子時,不(bu)要過于追求粽葉的(de)顏色(se)。一般情況下,墨綠、黃綠、淡黃都(dou)是正常(chang)的(de)。
新鮮粽(zong)子、速凍粽(zong)子的粽(zong)葉(xie)應包裹完(wan)好(hao),棕體應形狀(zhuang)完(wan)整,無露(lu)米、變形現象,粽(zong)線(xian)捆扎松緊適度。很多含有雜(za)糧或雜(za)豆(dou)的粽(zong)子,需要較(jiao)長的蒸煮(zhu)(zhu)(zhu)時(shi)(shi)間(jian)才能(neng)煮(zhu)(zhu)(zhu)熟煮(zhu)(zhu)(zhu)透。冷粽(zong)子因(yin)(yin)淀粉返生、脂肪(fang)凝固等原因(yin)(yin)不宜直接食(shi)用(yong),否則(ze)影響(xiang)粽(zong)子的口感及風味,特(te)別是肉餡粽(zong)子等含油脂較(jiao)高(gao),更應當煮(zhu)(zhu)(zhu)熟煮(zhu)(zhu)(zhu)透后(hou)食(shi)用(yong)。煮(zhu)(zhu)(zhu)制時(shi)(shi)間(jian)可參考產品包裝(zhuang)上的說明。
三、分類存放,少量購買,隨包隨吃
粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(zi)分新(xin)鮮(xian)粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(zi)、速凍(dong)粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(zi)、真空包(bao)裝(zhuang)粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(zi)(常溫粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(zi)),不(bu)同(tong)的(de)粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(zi)類別,應采用(yong)(yong)(yong)不(bu)同(tong)的(de)儲存方法。端午節氣,天(tian)(tian)氣比(bi)較(jiao)炎熱(re),且南(nan)方地(di)區濕(shi)度較(jiao)高(gao),粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(zi)營養豐富,含水量較(jiao)高(gao),在(zai)(zai)這樣的(de)環境中容易酸敗,霉菌等(deng)微(wei)生(sheng)物極易生(sheng)長繁殖。常溫下(xia),不(bu)能(neng)將粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(zi)悶放(fang)(fang)(fang)(fang)(fang)在(zai)(zai)不(bu)透氣的(de)塑料袋中,新(xin)鮮(xian)粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(zi)因保(bao)質期短,每次(ci)(ci)要(yao)少量購買,即時(shi)食用(yong)(yong)(yong),如(ru)能(neng)在(zai)(zai) 2-3 天(tian)(tian)內食用(yong)(yong)(yong)完,可(ke)放(fang)(fang)(fang)(fang)(fang)置在(zai)(zai)冰(bing)(bing)(bing)箱中冷藏;如(ru)要(yao)存放(fang)(fang)(fang)(fang)(fang)多日,宜(yi)放(fang)(fang)(fang)(fang)(fang)入冷凍(dong)格凍(dong)藏。常溫粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(zi)可(ke)直接放(fang)(fang)(fang)(fang)(fang)在(zai)(zai)室(shi)內陰(yin)涼處存放(fang)(fang)(fang)(fang)(fang),也(ye)可(ke)在(zai)(zai)冰(bing)(bing)(bing)箱冷藏室(shi)存放(fang)(fang)(fang)(fang)(fang),不(bu)建議(yi)在(zai)(zai)冰(bing)(bing)(bing)箱冷凍(dong)室(shi)存放(fang)(fang)(fang)(fang)(fang),以防止(zhi)包(bao)裝(zhuang)袋凍(dong)裂。如(ru)果是自制粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(zi),最好使用(yong)(yong)(yong)新(xin)鮮(xian)粽(zong)(zong)(zong)(zong)(zong)葉,隨(sui)包(bao)隨(sui)吃(chi)。包(bao)粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(zi)時(shi)手要(yao)干(gan)凈衛(wei)(wei)生(sheng),食材(cai)、粽(zong)(zong)(zong)(zong)(zong)葉、加工器具(ju)等(deng)要(yao)清洗干(gan)凈,以保(bao)證制作過(guo)程(cheng)安全衛(wei)(wei)生(sheng)。自制粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(zi)可(ke)用(yong)(yong)(yong)高(gao)壓鍋、小(xiao)火燜煮等(deng)方式(shi),確保(bao)粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(zi)蒸熟煮透后再食用(yong)(yong)(yong)。沒(mei)吃(chi)完的(de)粽(zong)(zong)(zong)(zong)(zong)子(zi)(zi)(zi)需要(yao)放(fang)(fang)(fang)(fang)(fang)冰(bing)(bing)(bing)箱冷藏或(huo)冷凍(dong),再次(ci)(ci)食用(yong)(yong)(yong)時(shi)須徹(che)底加熱(re)。
四、科學食用,尤其對糖尿病患者等特殊人群
粽子大多屬于高糖(高淀粉)、高能(neng)量(liang)(liang)的食物,食用時,最好搭(da)配(pei)一些(xie)蔬菜(cai)、水果(guo)、湯羹(geng)等,既均衡營養,又有(you)助消(xiao)化。有(you)糖尿病(bing)(bing)、三高、肝膽(dan)等疾病(bing)(bing)的患者一定要控制食用量(liang)(liang)。即使是身體健康的人一次也(ye)不宜過(guo)量(liang)(liang)食用,以免(mian)引起胃腸負擔過(guo)重,造成消(xiao)化不良。另(ling)外,端午期(qi)間,要注意吃動(dong)平(ping)衡,享受美食的同時,也(ye)要適量(liang)(liang)運動(dong)。
