蔣垛脆餅(bing)(bing)是(shi)江蘇泰州的特(te)色名(ming)點,其(qi)實,脆餅(bing)(bing)并非(fei)蔣垛專屬,整(zheng)個(ge)泰州都有這道(dao)點心,只是(shi)蔣垛人一直在做,其(qi)它地方基本上看不到了。七八十年代,老家女人生(sheng)了孩子,親朋好友都要送(song)月(yue)子禮的,禮物無非(fei)是(shi)馓子和脆餅(bing)(bing)。以(yi)后,條件(jian)好了開始送(song)雞(ji)蛋、蹄膀等(deng)。
蔣垛(duo)脆(cui)(cui)餅(bing)特(te)點是(shi)色(se)澤(ze)金黃(huang),層次清晰,脆(cui)(cui)而不(bu)碎,油(you)而不(bu)肥,甜(tian)(tian)而不(bu)膩,香酥(su)適口。西亭脆(cui)(cui)餅(bing)選用(yong)(yong)(yong)上(shang)等精白面粉為主料,經(jing)二十八道工(gong)序(xu),用(yong)(yong)(yong)手工(gong)制成(cheng)。脆(cui)(cui)餅(bing)用(yong)(yong)(yong)微火(huo)烘烤(kao),表面黃(huang)而不(bu)焦;脆(cui)(cui)餅(bing)的工(gong)藝考究,每只餅(bing)有十八層次,用(yong)(yong)(yong)開水泡(pao)餅(bing),則層次清晰可見。蔣垛(duo)脆(cui)(cui)餅(bing)有兩種吃法:干吃和用(yong)(yong)(yong)開水泡(pao)了(le)吃。干吃則松脆(cui)(cui)香酥(su),因面上(shang)沾有芝麻,所以越嚼越香;用(yong)(yong)(yong)開水泡(pao)了(le)吃,則鮮(xian)甜(tian)(tian)適口,特(te)別(bie)適合老年人(ren)的胃口。
面(mian)(mian)粉(fen)加(jia)白砂糖(tang),植物油,少量香油,加(jia)水(shui)和在一(yi)起,比做手搟(xian)面(mian)(mian)要加(jia)多點(dian)水(shui),比較(jiao)柔(rou)軟一(yi)點(dian),然(ran)后切一(yi)塊塊的(de),再手搟(xian)成圓形的(de)薄皮狀(zhuang),然(ran)后疊起來成長(chang)方(fang)形,上面(mian)(mian)撒一(yi)層芝麻就行(xing)了(le)。
