土(tu)(tu)豆(dou)粉最早起(qi)源于明(ming)(ming)(ming)朝宮廷,明(ming)(ming)(ming)亡(wang)后傳入民間。因口味(wei)獨(du)特(te)贏得(de)世人(ren)稱(cheng)贊,流(liu)傳至今,成(cheng)為中(zhong)華一代名吃。相傳明(ming)(ming)(ming)朝御廚(chu)將土(tu)(tu)豆(dou)選料(liao)(liao)提粉、配(pei)料(liao)(liao)打(da)芡、育香和(he)面、沸水(shui)漏條、冷浴晾制,以此制成(cheng)。土(tu)(tu)豆(dou)粉所用的高(gao)湯采集骨(gu)湯精華,配(pei)以近幾十種(zhong)獨(du)門中(zhong)藥和(he)天然香料(liao)(liao),運(yun)用了秘制工藝。吃土(tu)(tu)豆(dou)粉的方法有兩(liang)種(zhong),一是(shi)用開(kai)水(shui)調和(he),配(pei)以白(bai)糖(tang)、食(shi)鹽、蜂蜜;二是(shi)用鍋煎成(cheng)薄(bo)餅、切(qie)片(pian),可以下(xia)火(huo)鍋與(yu)(yu)雞或豬蹄燉食(shi),還可與(yu)(yu)回(hui)鍋肉(rou)混炒。
