蓮子的種類
蓮(lian)(lian)(lian)(lian)(lian)(lian)子(zi)(zi),是(shi)睡蓮(lian)(lian)(lian)(lian)(lian)(lian)科水生草本(ben)(ben)植物蓮(lian)(lian)(lian)(lian)(lian)(lian)的(de)(de)(de)種(zhong)(zhong)子(zi)(zi)。又稱(cheng)蓮(lian)(lian)(lian)(lian)(lian)(lian)實、蓮(lian)(lian)(lian)(lian)(lian)(lian)米、蓮(lian)(lian)(lian)(lian)(lian)(lian)肉。蓮(lian)(lian)(lian)(lian)(lian)(lian)子(zi)(zi)以湘蓮(lian)(lian)(lian)(lian)(lian)(lian)為優,湘蓮(lian)(lian)(lian)(lian)(lian)(lian)歷來作為進(jin)貢(gong)朝廷(ting)的(de)(de)(de)珍(zhen)品,故又稱(cheng)“貢(gong)蓮(lian)(lian)(lian)(lian)(lian)(lian)”。蓮(lian)(lian)(lian)(lian)(lian)(lian)子(zi)(zi)包括(kuo)紅(hong)蓮(lian)(lian)(lian)(lian)(lian)(lian)子(zi)(zi)、白蓮(lian)(lian)(lian)(lian)(lian)(lian)子(zi)(zi)、石蓮(lian)(lian)(lian)(lian)(lian)(lian)子(zi)(zi)三種(zhong)(zhong)。石蓮(lian)(lian)(lian)(lian)(lian)(lian)子(zi)(zi)是(shi)指(zhi)成熟(shu)甚至陷(xian)于淤泥的(de)(de)(de)蓮(lian)(lian)(lian)(lian)(lian)(lian)蓬剝下來或自然掉下來的(de)(de)(de)帶(dai)黑色(se)外(wai)種(zhong)(zhong)皮(pi)(pi)的(de)(de)(de)蓮(lian)(lian)(lian)(lian)(lian)(lian)子(zi)(zi)。紅(hong)蓮(lian)(lian)(lian)(lian)(lian)(lian)子(zi)(zi)是(shi)指(zhi)除去外(wai)種(zhong)(zhong)皮(pi)(pi)的(de)(de)(de)蓮(lian)(lian)(lian)(lian)(lian)(lian)子(zi)(zi),一般分為去芯(xin)(xin)(xin)和(he)不去芯(xin)(xin)(xin)兩種(zhong)(zhong),白蓮(lian)(lian)(lian)(lian)(lian)(lian)子(zi)(zi)是(shi)指(zhi)去掉內(nei)種(zhong)(zhong)皮(pi)(pi)的(de)(de)(de)蓮(lian)(lian)(lian)(lian)(lian)(lian)子(zi)(zi),也分去芯(xin)(xin)(xin)不去芯(xin)(xin)(xin)兩種(zhong)(zhong)。幾種(zhong)(zhong)蓮(lian)(lian)(lian)(lian)(lian)(lian)子(zi)(zi)功效基本(ben)(ben)相同但使用上(shang)略有區別(bie):紅(hong)蓮(lian)(lian)(lian)(lian)(lian)(lian)子(zi)(zi)帶(dai)紅(hong)色(se)外(wai)皮(pi)(pi),一般用于養心(xin)安神的(de)(de)(de)比較(jiao)多,白蓮(lian)(lian)(lian)(lian)(lian)(lian)子(zi)(zi)色(se)白,一般用于潤肺健脾(pi)的(de)(de)(de)多。
蓮子的功效與作用
1、清(qing)心、祛斑:帶心蓮子能清(qing)心火,祛除雀斑,然不(bu)可久煎。
2、防癌(ai)(ai)抗癌(ai)(ai):蓮(lian)子(zi)善于補五(wu)臟不足,通利十二經脈氣血,使氣血暢(chang)而不腐(fu),蓮(lian)子(zi)所含氧化(hua)黃心(xin)樹寧堿(jian)對鼻咽癌(ai)(ai)有(you)抑制作用,這一切,構成了蓮(lian)子(zi)的防癌(ai)(ai)抗癌(ai)(ai)的營養保健功能。
3、強(qiang)(qiang)心(xin)安神(shen):蓮子芯所含生物堿具有顯著的強(qiang)(qiang)心(xin)作用(yong),蓮芯堿則(ze)有較強(qiang)(qiang)抗鈣及抗心(xin)律不齊的作用(yong)。
蓮子的食用方法
1、 脾益胃散:蓮子肉、芡實、扁豆(dou)、薏(yi)苡仁、山藥、白術、茯苓各120克(ke),人參(can)15克(ke)(或(huo)黨參(can)60克(ke))。共炒研末。臨用(yong)時可加適(shi)量白糖。每次用(yong)15~30克(ke),以溫開水沖調服。
2、 蓮(lian)子百合麥冬湯:蓮(lian)子15克(帶心),百合30克,麥門冬12克。加水煎服(fu)。
3、 蓮肉糕:蓮子肉、糯米(mi)(或大米(mi))各200g,炒香;茯苓100g(去(qu)皮)。共研為細末,白糖適量,一同攔勻,加水使之成(cheng)泥狀,蒸熟(shu),待(dai)冷后壓平切塊(kuai)即成(cheng)。
源于(yu)《士材三書》。茯苓為補(bu)脾(pi)利(li)濕藥,與蓮子肉、糯米同(tong)蒸糕食(shi),則補(bu)脾(pi)益胃之(zhi)功(gong)尤著(zhu)。用(yong)于(yu)脾(pi)胃虛(xu)弱,飲(yin)食(shi)不化,大便稀溏等。
4、紅棗(zao)銀(yin)耳蓮子(zi)湯:紅棗(zao)100克(ke),白木耳50克(ke),蓮子(zi)100克(ke),紅糖適量。將紅棗(zao)、白木耳、蓮子(zi)洗凈后(hou)泡水。鍋(guo)中加(jia)適量的(de)水,放入(ru)3種(zhong)材(cai)料,煮熟后(hou),加(jia)糖調味(wei)。
本方用帶心蓮子以(yi)清心寧神(shen),百合、麥門冬亦(yi)有清心寧神(shen)之效。用于病后余熱未(wei)盡,心陰不足(zu),心煩口干,心悸不眠等。
5、蜜汁紅(hong)蓮:是將(jiang)蓮子(zi)與紅(hong)棗先用文火(huo)燉1小時,再(zai)加(jia)入白糖、豬板油,文火(huo)燜(men)至汁干食用。配(pei)上銀(yin)耳可(ke)調(diao)制(zhi)成(cheng)蓮子(zi)銀(yin)耳湯;配(pei)上人參和(he)適量冰(bing)糖隔水蒸燉,為蓮肉人參湯;配(pei)上桂圓(yuan)再(zai)加(jia)紅(hong)棗、糯(nuo)米共(gong)煮,可(ke)熬成(cheng)蓮子(zi)桂圓(yuan)湯。
6、蓮子紅棗(zao)湯(tang):蓮藕(ou)兩大截去(qu)皮切塊洗凈瀝干(gan);紅棗(zao)4兩、蓮子2兩用(yong)水(shui)(shui)浸泡至(zhi)軟后撈起;將(jiang)藕(ou)塊和紅棗(zao)、蓮子加冰糖適量水(shui)(shui)煮1個半(ban)小(xiao)時,至(zhi)食(shi)材軟透。
7、蓮子(zi)粥(zhou):蓮子(zi)20克發脹后(hou),在水(shui)中用(yong)刷把(ba)擦去(qu)表層,抽去(qu)蓮心沖(chong)洗(xi)干(gan)凈后(hou)放(fang)入(ru)鍋內,加(jia)清水(shui)在火上煮(zhu)爛熟,備用(yong)。粳米100克同(tong)煮(zhu),淘洗(xi)干(gan)凈,放(fang)入(ru)鍋中加(jia)清水(shui)煮(zhu)成薄粥(zhou),粥(zhou)熟后(hou)摻入(ru)蓮子(zi),熟后(hou)加(jia)冰糖(tang)或白糖(tang)再稍(shao)燉既(ji)可食用(yong)。
